Buying kapia peppers is the first essential step in preparing a delicious recipe. Choose peppers that are as straight as possible, avoiding those with many curves, as they may have a less pleasant taste. Cook them over an open flame, where they will acquire an unmistakable aroma, but if you prefer, you can also roast them in the oven by placing them on a tray. However, the outdoor cooking option offers a more authentic culinary experience and a more intense aroma.

Roast the peppers on a well-heated grill, turning them periodically to cook evenly. You will know they are ready when the skin becomes charred and easily peels off. After removing them from the heat, place them in a bowl and generously sprinkle coarse salt over them. The salt will not only enhance the flavor of the peppers but will also help retain moisture. Let them sit and absorb the salt while you repeat the process with the next batch of peppers. After all the peppers are roasted, let them cool for about 30 minutes. This resting time is essential for obtaining a skin that is easier to peel.

Prepare a bowl of cold water so that you have a place to rinse your hands during the peeling process. Use this water to remove any remaining bits of skin and to maintain cleanliness. Start the peeling process by carefully removing the charred skin, and then gently scrape the top of the peppers to remove the stems. If you notice that the stems are too long, you can trim them a bit to facilitate packaging.

After you have peeled all the peppers, prepare plastic bags in which you will store 2-3 peppers for each person. Make sure the bags are well sealed to prevent air from entering, which could affect the quality of the product. Place the bags in the freezer, where the kapia peppers can be stored for later use in various dishes or as a side dish. This process will not only allow you to enjoy the fresh taste of kapia peppers throughout the year, but it will also turn every meal into an unforgettable culinary experience.
