To prepare a delicious recipe for cheese pretzels, you will need a few essential ingredients and a little patience. In a large bowl, put the flour, grated cheese, butter, eggs, and sour cream. Use a mixer and mix the ingredients at low speed until you obtain a homogeneous dough. After the dough is well mixed, transfer it to a clean working surface and start kneading it gently by hand for about 30 seconds. The dough should become elastic and not stick to your hands.
Divide the dough into two halves and shape each part into a ball. One half will be covered to prevent drying out, while the other will remain on the working surface, which you have sprinkled with a little flour. Then, using a rolling pin, roll out the dough until it reaches a thickness of about 0.4 - 0.5 cm. Use a pretzel cutter to cut various shapes from the rolled-out dough, ensuring that each pretzel is of uniform size.
Line a baking tray with parchment paper and place all the cut shapes of dough in it. In a small bowl, mix an egg yolk with 2-3 tablespoons of water, then use a brush to coat the surface of the dough with this mixture, which will give a nice color to the pretzels. Optionally, you can sprinkle sesame seeds, poppy seeds, or other spices on top.
To obtain a salt glaze, mix the flour with salt in a small bowl and gradually add water, stirring continuously until the mixture becomes homogeneous and slightly fluid. Preheat the oven to 175 degrees Celsius. Once the oven is ready, bake the pretzels for 20-25 minutes until they become golden and appetizing. If you choose to use the salt glaze, sprinkle the pretzels with the prepared mixture 5 minutes before taking them out of the oven to give them a crispy and tasty crust.
