Preparation time: 20 minutes
Cooking time: 30-35 minutes
Total time: 55-60 minutes
Servings: 6-8

Ingredients

- 500 g minced meat (beef, pork, turkey, or chicken, depending on preferences)
- 2 eggs
- 1/2 cup rice
- Salt and pepper, to taste
- 1 l bors (or to taste)
- 3 tablespoons oil
- 2 tablespoons tomato paste
- 1 celery root (about 100 g)
- 1 parsley root (about 100 g)
- 1 carrot (about 100 g)
- 1 bell pepper
- 2 onions
- Lovage and fresh parsley, for serving

Preparation of meatball soup

Step 1: Preparing the vegetables
Start by washing and peeling the vegetables. Dice the onions, carrot, bell pepper, celery, and parsley into small cubes. This step is essential as the vegetables will provide the base flavor of your soup. I advise using a sharp knife for uniform cuts, so the vegetables cook evenly.

Step 2: Boiling the vegetables
In a large pot, heat the 3 tablespoons of oil over medium heat. Add the onion and sauté until it becomes translucent, about 3-4 minutes. Then, add the carrot, celery, and parsley, continuing to cook for 5 minutes. These vegetables will enhance the flavor, adding depth to your soup.

Add 2 liters of water and let it boil. Once the water starts boiling, add the bors and let it boil for 10 minutes. This step will intensify the soup's flavor.

Step 3: Preparing the meatballs
Meanwhile, in a large bowl, combine the minced meat with the two eggs, salt, and pepper to taste. Mix well to achieve a homogeneous composition. Here you can also add other spices, such as sweet paprika or herbs, to give your meatballs a unique flavor. Using wet hands, form balls the size of walnuts, which will become the meatballs.

Step 4: Cooking the meatballs
Once the vegetables have boiled, carefully add the meatballs to the pot. Let them boil for 10-15 minutes, being careful not to stir too much, so the meatballs do not break apart.

Step 5: Finalizing the soup
After the meatballs are cooked, add the tomato paste and the washed rice. Let it boil for another 10-15 minutes. The rice will absorb the flavors of the soup and add a pleasant texture.

In the end, add the chopped lovage and fresh parsley to bring a touch of freshness. These herbs are not only decorative but also very aromatic, perfectly complementing the soup.

Step 6: Serving
The meatball soup is served hot, and for those who prefer a creamier taste, adding sour cream to the bowl is optional but recommended. This will also add a touch of luxury to your soup.

Serving suggestions
To enrich the culinary experience, I suggest serving the soup alongside a slice of homemade bread or creamy polenta. A glass of dry white wine or fresh lemonade can perfectly complement the meal.

Variations and tips
1. Cheese meatballs: Try adding grated telemea cheese to the meatball mixture for a richer taste.
2. Meatball soup with vegetables: You can add zucchini or green beans to introduce more vegetables into the recipe.
3. Spicy soup: Add a hot pepper or a few drops of hot sauce to give your soup a bit of kick.

Nutritional benefits
Meatball soup is a balanced meal, rich in proteins due to the meat and eggs, but also in vitamins and minerals from the vegetables. A serving of soup contains approximately 250-300 calories, depending on the specific ingredients used. It is an excellent choice for a healthy lunch or a comforting dinner.
