Moldovan sarmale are a true culinary feast, full of flavors and tradition. This simple sarmale recipe is perfect for festive meals or a cozy family evening. Whether you're making them for the first time or you're a kitchen virtuoso, I will guide you step by step to achieve the most delicious sarmale. Preparing this dish takes about 30 minutes for ingredient preparation, plus 2 hours of baking in the oven, and you'll end up with 4-6 servings.

Necessary ingredients:
- 1 kg minced meat (a combination of pork and beef)
- 2 large onions
- 1 leek
- 1 large carrot
- 1 bell pepper
- 1 cup of rice (preferably long grain)
- 1 bunch of green vegetables (dill and parsley)
- Salt and pepper to taste
- Grape or cabbage leaves (about 20-25 leaves)
- 4 tablespoons of tomato paste
- 1 tablespoon of flour
- 4 tablespoons of oil
- Water and borscht (to taste)

Preparation:

1. Preparing the ingredients: Start by finely chopping the onion and leek. Be quick to cut them evenly for uniform cooking. Grate the carrot and dice the bell pepper into small cubes. It’s important that the vegetables are fresh to give the sarmale an authentic taste.

2. Sauté the vegetables: In a large skillet, heat the 4 tablespoons of oil. Add the onion and leek, letting them sauté over medium heat for 5-7 minutes until they become translucent. Then, add the carrot and bell pepper, continuing to sauté for another 5-6 minutes. This step will intensify the flavors and add a pleasant texture.

3. Cook the rice: Add the washed rice to the skillet along with a cup of water. Mix well and let it simmer on low heat until the rice absorbs the water and swells, about 10 minutes. The rice does not need to be fully cooked at this stage, just starting to soften.

4. Mix the filling: Once the rice is ready, remove the skillet from the heat and add the minced meat, finely chopped green vegetables, 4 tablespoons of tomato paste, a tablespoon of flour, salt, and pepper. Mix all the ingredients well to obtain a homogeneous composition.

5. Wrapping the sarmale: Prepare the grape or cabbage leaves: if using cabbage, make sure it is slightly boiled to be easier to roll. Place a tablespoon of filling on each leaf and roll them tightly, folding at the ends to prevent the filling from escaping.

6. Cook the sarmale: Place the sarmale in a cast-iron pot, tightly packed next to each other. Add enough water and borscht to completely cover them, then mix the 3 tablespoons of tomato paste into the liquid in the pot. Cover with a lid and bake in the oven at 160°C for 2 hours. This is the key to tender and flavorful sarmale.

7. Serving: After the baking time is up, take the sarmale out of the oven and let them rest for a few minutes before serving. They pair perfectly with warm polenta and sour cream.

Suggestions and variations: You can experiment with different types of meat (such as turkey or lamb) or add spices like thyme or sweet paprika to customize the flavor of the sarmale. Additionally, for an extra burst of flavor, you can add some pieces of smoked meat to the pot.

These Moldovan sarmale are not just a dish, but also a memory of culinary traditions passed down through generations. Enjoy your meal!
