Delicious cookies with coffee and chocolate - a perfect combination for indulgent moments

Do you remember those days when the aroma of freshly brewed coffee filled the air, inviting you to enjoy a moment of tranquility? These coffee and chocolate cookies are exactly the little joy we seek when we want to treat ourselves or impress our guests. With a crunchy texture and a decadent filling, these cookies will make you fall in love with every bite.

Preparation time: 30 minutes
Baking time: 20-25 minutes
Total time: 1 hour and 5 minutes (including chilling time)
Number of servings: Approximately 20 cookies

Ingredients for the cookies:
- 150 g soft butter (at room temperature)
- 70 g sugar
- A pinch of salt (you can omit if preferred)
- 1 egg yolk
- 2 sachets of instant coffee
- 1 tablespoon of cocoa powder
- 140 g flour
- 100 g dark chocolate (minimum 70% cocoa for an intense flavor)

Ingredients for the chocolate cream:
- 100 ml heavy cream
- 2 tablespoons of cognac (or rum essence, as preferred)
- 1 sachet of instant coffee
- Chocolate-covered coffee beans (for decoration)

Step-by-step preparation:

1. Preparing the dough: Start by placing the soft butter in a large bowl. Use an electric mixer to cream it well with the sugar and a pinch of salt until the mixture becomes creamy and fluffy. This step is essential for achieving a light texture.

2. Adding the yolk: Add the egg yolk and continue mixing until everything is well combined. The yolk will add richness and moisture to the dough.

3. Including the dry ingredients: In another bowl, sift the flour, cocoa powder, and the two sachets of instant coffee. Mix the dry ingredients well, then gradually add them to the butter mixture. Use a spatula to incorporate the ingredients, ensuring there are no lumps remaining.

4. Forming the dough: When the dough becomes homogeneous, form it into a ball, wrap it in plastic wrap, and refrigerate for about 1 hour. This step is important for firming up the dough and making cookie shaping easier.

5. Cutting the cookies: After the dough has chilled, remove it from the fridge and roll it out on a lightly floured surface to about 1 cm thick. Use a cutter to cut out circles. If you find it difficult to roll out the dough, don't be discouraged! You can form small balls by hand and flatten them. This is a perfectly acceptable option and can add a rustic charm to your cookies.

6. Baking: Place the cookies on a baking sheet lined with parchment paper and bake them in a preheated oven at 180°C for 20-25 minutes. The cookies are ready when they become slightly firm to the touch.

7. Preparing the chocolate cream: While the cookies are baking, you can prepare the cream. In a small saucepan, heat the cream over low heat, being careful not to let it boil. When warm, add the chocolate broken into pieces and stir continuously until melted. Add the cognac and the sachet of instant coffee, mixing until everything is well combined.

8. Cooling the cream: Once the cream is ready, let it cool slightly, then place it in the fridge until it thickens (about 30 minutes). After it has thickened, you can whip it with a mixer to achieve an airy consistency.

9. Assembling the cookies: Choose one cookie, place a teaspoon of chocolate cream on it, then cover with another cookie, pressing gently. Repeat the process until all cookies are assembled.

10. Decorating: Finish with chocolate-covered coffee beans, placing them on each cookie. These not only add an elegant touch but also a boost of flavor.

Serving suggestions: These cookies are perfect alongside a cup of coffee or tea. You can serve them as a refined dessert at a party or simply as a delicious snack during the day.

Useful tips:
- If you want fluffier cookies, make sure the butter is well incorporated with the sugar.
- You can experiment with different types of chocolate in the cream, such as white chocolate or milk chocolate, depending on your taste preferences.
- Substitute the instant coffee with cocoa powder for a more intense chocolate flavor.

Calories and nutritional benefits: Each cookie may contain approximately 100 calories, depending on size and ingredients used. Dark chocolate is rich in antioxidants, and coffee can enhance concentration and mood.

Coffee and chocolate cookies are not just a treat, but also a wonderful way to bring a little joy into your day. Now that you have all the necessary information, all that's left is to start cooking! Perhaps these cookies will become your new favorite recipe. Feel free to let me know how you liked them!
