Aromatic Potatoes (Vegan)

 Ingredients: 400 grams of potatoes, 10 chopped olives, fresh rosemary and thyme, 3 tablespoons of olive oil, garlic, 2 cherry tomatoes, salt, pepper

We start by preparing the necessary ingredients for our delicious baked potatoes with olives and herbs. The first step is to peel the potatoes. Choose medium-sized potatoes, preferably new ones, as they have a finer texture and better taste. After washing them well under cold water, we peel them with a sharp knife. We cut the potatoes into uniform pieces, about 3-4 cm, so they cook evenly.

Now, we place the peeled potatoes in a large pot with cold water and add a tablespoon of salt. We bring the water to a boil and let the potatoes simmer for about 10 minutes, just until they become slightly soft, but not fully cooked. This will ensure that when we bake them, they will get a delicious crust while the inside remains fluffy.

Once the potatoes are half-cooked, we drain them well and transfer them to a baking dish. Here, we add chopped olives, which can be green or black, depending on your preferences. The olives bring a salty taste and a distinct aroma to the dish, so don’t neglect them! Then, we drizzle the potatoes with good quality olive oil, which will help caramelize them and achieve a tempting golden color.

We add a few cloves of garlic, crushed but left unpeeled, to release their aroma during baking. The garlic will add an extra flavor to the dish. We continue by adding the aromatic herbs, preferably fresh thyme and rosemary, which pair perfectly with the potatoes. They not only add a wonderful taste but also an irresistible aroma. We season everything with salt and freshly ground pepper to taste.

We mix all the ingredients well, ensuring that each potato piece is evenly coated. Then, we pour a cup of water into the dish, which will help create a moist steam inside the oven and keep the potatoes juicy.

We preheat the oven to 200 degrees Celsius and, when ready, we place the dish with potatoes inside. We let them bake for 30 minutes or until the potatoes become golden and crispy on the outside. Finally, we take them out of the oven and let them cool for a few minutes before serving. These potatoes with olives and aromatic herbs are perfect as a side dish for any main course but can also be enjoyed as a standalone dish. Enjoy your meal!
