Do you dream of a dessert that impresses both in taste and appearance? The cheesecake is the perfect choice! This simple yet sophisticated recipe uses ladyfingers instead of cookies, providing a fluffier crust and a unique texture. I will guide you step by step to achieve a perfect result!
Ingredients:
- 200 g ladyfingers
- 100 g melted butter
- 400 g sweet ricotta
- 400 g sour cream
- 300 ml liquid cream
- 6 eggs
- 250 g sugar
- 3 packets of vanilla sugar
- 1 packet of vanilla CremeOle
- 2 tablespoons cornstarch
Step 1: Preparing the crust
Start by crushing the ladyfingers. You can use a food processor to turn them into fine crumbs quickly. If you don’t have a processor, you can put them in a bag and crush them with a rolling pin. Transfer the crumbs to a bowl and add the melted butter. Mix well until the butter is completely incorporated.
Step 2: Forming the crust
Prepare a springform pan. Pour the ladyfinger mixture into the pan, pressing down well to create an even and compact crust. Make sure it is well pressed so it holds up during baking. Place the pan in the refrigerator for 10 minutes to firm up.
Step 3: Preheating the oven
While the crust cools, preheat the oven to 150 degrees Celsius. This step is essential for achieving an even bake for the cheesecake.
Step 4: Preparing the cheese mixture
In a large bowl, combine the sweet ricotta, sugar, and vanilla sugar. Mix well with a mixer until you achieve a smooth composition. Add the sour cream and continue mixing. Then, add the eggs one at a time, mixing well after each addition. This step is important to avoid lumps in the mixture.
Step 5: Finishing the cream
Finally, add the liquid cream, cornstarch, and the packet of CremeOle. Mix everything well until you obtain a light and smooth cream.
Step 6: Baking the cheesecake
Remove the crust from the refrigerator and carefully pour the cheese mixture over it. Place the pan in the preheated oven and let it bake for 1 hour and 30 minutes. It is important not to open the oven door in the first 60 minutes to avoid a sudden drop in temperature.
Step 7: Cooling and serving
After the cheesecake is baked, remove it from the oven and let it cool in the pan. Then, refrigerate it for at least 4 hours to firm up. This step will help achieve a perfect texture.
To serve, take the cheesecake out of the refrigerator and carefully remove the springform ring. If it sticks to the edges, you can use a knife to loosen it. Dust powdered sugar on top for an elegant appearance and transfer the cheesecake to a platter.
Variations and suggestions:
For an even more intense flavor, you can add grated lemon or orange zest to the cheese mixture. You can also replace the ricotta with cottage cheese or mascarpone for a creamier cheesecake. Served with berry sauce or a spoonful of jam, this cheesecake becomes a true delight!
Enjoy this simple and delicious cheesecake, perfect for any occasion!
