Preparation time: 15 minutes
Cooking time: 1 hour and 30 minutes
Total time: 1 hour and 45 minutes
Servings: 4 – 6
Ingredients
- 250 grams of dried beans (preferably white or yellow)
- 1 carrot
- 1 parsnip (or celery)
- 1 small celery root
- 1 potato
- 4 onions (2 for cooking and 2 for garnish)
- 1 bay leaf
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil (or other vegetable oil)
- 1 tablespoon Delikat (or other preferred seasoning)
- 2 tablespoons tomato paste
Instructions
1. Preparing the Beans
Start by cleaning the dried beans. Choose undamaged beans and rinse them well under cold running water. Place the beans in a large bowl and cover them with cold water, adding a teaspoon of baking soda. This step is essential as the baking soda helps soften the beans and reduce cooking time. Let the beans soak in water overnight.
2. Boiling the Beans
After soaking, drain the water and rinse the beans. In a large pot, add the beans and fill it with fresh water. Boil the beans over medium heat, discarding the first three waters (this helps eliminate gas and impurities). After discarding these waters, add fresh water and continue to simmer on low heat.
3. Flavoring
In the fourth water in which you are boiling the beans, add the carrot cut into pieces, parsnip, celery root, and potato, along with the bay leaf, the two chopped onions, thyme, and pepper. Also add the tablespoon of Delikat and the two tablespoons of oil. Boil everything until the beans are very tender and the vegetables are cooked.
4. Blending
Once the beans are cooked, remove all the ingredients from the water and let them drain. Place the beans along with the cooked vegetables in a food processor. Blend everything until you achieve a smooth paste. During blending, gradually add the two cups of oil to achieve a creamy and homogeneous consistency. Taste and adjust the seasoning as desired.
5. Garnishing
To give the dish a special touch, sauté the remaining two onions in a little oil until they turn golden. Add the two tablespoons of tomato paste and mix well. This mixture will add not only color but also flavor.
Serving
The bean spread is served warm, on a platter or in individual bowls, garnished with the sautéed onions. It pairs wonderfully with pickles, fresh bread, or even feta cheese for a delicious contrast.
Personal Suggestion
To add a unique twist, you can incorporate some olives or roasted peppers into the bean spread mixture. These ingredients will enhance the flavor and add an interesting texture.
Calories and Nutritional Benefits
Beans are an excellent source of plant-based protein, fiber, vitamins, and minerals. A serving of bean spread (approximately 150 g) contains around 200 calories, making it a nutritious and filling meal, perfect for a balanced diet.
