Ingredients:
- 1 kg ripe peaches
- 100 ml Campari
- 350 g sugar
- 1 packet Gelfix Super 3:1 Dr. Oetker
Step 1: Preparing the peaches
Start by washing the peaches well under a stream of cold water to remove impurities. After washing, let them drain in a colander for a few minutes. It is important to use ripe peaches as they will provide maximum sweetness and flavor. Once drained, cut them in half, remove the pits, and chop the flesh into small pieces. The total amount of chopped peaches should be approximately 1 kg.
Step 2: Mixing the ingredients
In a large bowl, add the chopped peaches, sugar, and Gelfix. Mix well so that the sugar integrates evenly. This step is essential to activate the pectin in Gelfix, which will help thicken the jam. At this point, measure 100 ml of Campari and add it to the mixture. The Campari will add a sophisticated note as well as a vibrant color.
Step 3: Cooking the jam

After a few minutes, when the mixture starts to boil, let it boil for about 10-12 minutes, continuing to stir.
