To prepare a delicious pork stew, the first step is to ensure that you have all the necessary ingredients. Start by cutting the pork into evenly sized cubes so that it cooks evenly. Choose quality meat, preferably from the thigh area, as this will add juiciness to the dish.

In a pot or deep saucepan, heat a generous amount of oil until it becomes hot. It is important for the oil to be well heated to achieve a nice browning of the meat. Add the meat cubes and fry them over high heat for about 10 minutes, stirring occasionally. The goal is to achieve a golden crust on the outside, which will add flavor to the stew.

Once the meat is browned, add the finely chopped onion. Continue to sauté over medium heat, stirring periodically, until the onion becomes translucent and soft. This will add a deep flavor base to the dish. When the onion is ready, it's time to add the broth, which can be meat or vegetable, depending on your preferences. Cover the pot with a lid and let it simmer on low heat until the liquid reduces by half, concentrating the flavors.

After the broth has reduced, add the chopped roasted pepper in larger pieces, which will bring a sweet and smoky note to the stew. At this stage, you can add a teaspoon of tomato paste, which will enhance the flavor of the dish. Don't forget the bay leaf, which will enrich the aroma of the stew. Season with salt and pepper to taste and let everything simmer on low heat, allowing the stew to reduce and thicken, stirring occasionally to prevent sticking to the bottom of the pot.

When the stew is almost ready, and the sauce has reached a pleasant consistency, it's time to sprinkle in the finely chopped herbs, preferably parsley or dill, to add freshness. Gently mix and let the dish simmer for a few more minutes so that the flavors combine perfectly. Serve the stew hot, alongside a side of polenta or with fresh bread, to savor every drop of the delicious sauce. Enjoy your meal!
