Lenten Crackers
I make these savory snacks every time I want something quick and easy to munch on, without complicated ingredients. I discovered that when I get home after a busy day, the vegan puff pastry from the freezer is a good solution. Especially if you have some stray seeds in the cupboard and a bit of ketchup left. Preparation takes no more than a few minutes, and baking is just as quick.
Quick Info
Total time: about 25 minutes
Preparation time: 10 minutes
Baking time: 15 minutes
Servings: 1 tray (approx. 18-24 snacks, depending on the width of the strips)
Difficulty: easy
Recipe type: vegan appetizer, quick snack
Ingredients
1 pack of vegan puff pastry (Linco or another similar option)
Univer ketchup (enough to spread a thin layer on the pastry, about 2-3 tablespoons)
1-2 tablespoons of olive oil
Iodized salt, to taste
Seed mix: pumpkin, sunflower, flax, sesame, poppy (about 2-3 tablespoons, combined to preference)
Preparation method
1. Take the puff pastry out of the freezer well in advance so it can thaw completely. If you use it semi-frozen, it will tear easily, and you won't be able to cut equal strips.
2. Preheat your oven to the highest temperature (high heat, usually 220-230°C). Prepare the tray with baking paper.
3. Place the thawed sheet on a clean surface. With a brush or spoon, quickly spread a thin layer of olive oil over the surface. You don’t need much, just enough for the seeds to stick better.
4. Spread the ketchup evenly over the entire sheet, without overloading it. You can use the back of a spoon for this.
5. Evenly sprinkle the iodized salt, depending on how salty you want the snacks to be. Then add the seed mix, spreading it out as much as possible so that there’s some in every bite.
6. With a thin-bladed knife or a pizza cutter, cut the dough into strips about 1-1.5 cm wide. They don’t have to be perfect, the important thing is that they are somewhat equal so they bake evenly.
7. Carefully transfer the strips to the tray lined with baking paper. If the dough sticks, you can use a spatula.
8. Place the tray in the preheated oven and bake the snacks for about 15 minutes, until they are lightly golden on the surface. Don’t forget them, as they can burn quickly at high heat, especially if the oven heats strongly from below.
9. Remove the tray and let them cool for a few minutes before moving them to a platter.
Why I make this recipe often
They are quick and require no planning. The ingredients are always found around the house. The vegan puff pastry behaves well even if you don’t use it immediately after thawing. The taste is balanced, they are not heavy or oily. They hold up pretty well for a few hours, so you can make them if you have unexpected guests or want something for a packed lunch.
Tips and variations
Tips
If you want them to be even crispier, roll the puff pastry sheet a bit thinner.
To prevent the seeds from falling off after baking, press them lightly with your hand onto the ketchup-coated surface before cutting the strips.
Do not overlap the strips on the tray, otherwise, they won’t brown evenly.
If you want them very crispy, leave them in the oven for another 1-2 minutes, but keep an eye on them to prevent burning.
Substitutions
If you don’t have Univer ketchup, you can use any other ketchup without animal ingredients.
You can omit the olive oil if you don’t have it or want to reduce fats, but the texture may be a bit drier.
The seed mix can be adjusted based on what you have on hand. You can use only sesame or only sunflower seeds.
Variations
You can add dried spices (oregano, thyme) if you want to change the flavor, but they are not necessary for the classic vegan recipe.
If you prefer a finer texture, use only small seeds, like sesame and poppy.
Serving ideas
They are suitable cold or at room temperature, as a snack or appetizer.
You can place them on a platter alongside a raw vegetable salad or other vegan snacks.
They can be packed for a short trip, but they don’t stay crispy for many hours.
Frequently asked questions
1. What type of puff pastry is suitable for this recipe?
It is important to use vegan puff pastry, meaning without butter or other animal fats. I used Linco, but there are other options in the supermarket.
2. Can I replace the ketchup with something else?
For the vegan version, ketchup is the simplest, but you can also try a thicker tomato sauce or even pepper paste. The taste will be different, but the final texture will remain similar.
3. How long can I keep the snacks after baking?
They are best consumed within the first few hours after cooling. After a day, they become soft and lose their initial crispiness.
4. Do I need to grease the puff pastry with anything other than oil?
No, olive oil helps the seeds stick and browns them. If you want, you can omit it, but the texture will be slightly different.
5. How can I cut the sheet without it tearing?
The easiest way is with a pizza cutter or sharp knife, right after you've added the seeds but before transferring the strips to the tray. The sheet must be well thawed; otherwise, it will crack when cutting.
Nutritional values
Estimation for 1 serving (approximately 2-3 snacks, depending on size):
Calories: approximately 90-110 kcal
Carbohydrates: 10-12 g
Proteins: 2-3 g
Fats: 5-6 g
Values vary depending on the amount of oil, ketchup, and seeds used, but also on the type of puff pastry. It is a relatively light snack but quite filling due to the seeds.
Storage and reheating
They can be stored at room temperature, covered with a napkin, for a few hours. If left until the next day, the texture softens, and they are not as good. Reheating does not restore the initial crispiness, so I recommend making only as much as you consume at the moment. However, if you still want to reheat them, place them in the hot oven for 2-3 minutes, without leaving them unattended to avoid burning.
