To prepare a delicious and flavorful dish, start by cutting the chicken breast into small pieces. Make sure to use a sharp knife to achieve even cuts. Then, add salt and pepper to taste, mixing well to ensure that each piece of meat is properly seasoned. Once you have completed this step, add the soy sauce, which will bring a savory note, and let the mixture chill in the refrigerator for a few hours to infuse the flavors. This marinating process is essential, as it allows the flavors to penetrate the meat.

After the marinating time has expired, place a pan on the heat and add very little oil, then add the chicken along with the marinade. Stir constantly to prevent sticking and to ensure even cooking. When the meat starts to turn golden, add the sliced mushrooms, julienned carrot, and red bell pepper, continuing to stir. This mix of vegetables will provide a pleasant contrast to the chicken. Once the vegetables become soft, add the corn kernels, ginger (if you choose to use it), broth or red pepper paste, and, if necessary, a bit more soy sauce. Continue to cook the mixture until the vegetables are fully cooked and the liquid has reduced, then let the composition cool.

To prepare the omelet noodles, beat the eggs together with the chopped parsley, sesame seeds, chili flakes, and soy sauce, seasoning with salt and pepper. In a pan with very little heated oil, pour the mixture and fry a uniform omelet, browning it on both sides. Once ready, remove the omelet onto an absorbent napkin and let it cool. Roll the omelet and cut it into thin strips, which will imitate noodles.

In a tray or a larger dish than the rice papers, put warm water. Take a rice paper sheet, quickly dip it in water to soften it, then lay it on a clean napkin. The sheet will soften quickly, so use it immediately. In the middle of the sheet, place 1-2 teaspoons of the chicken and vegetable mixture, then add a few strips of omelet. Carefully wrap the rice paper by bringing the bottom part towards the center, then fold the sides and roll carefully. This process requires patience, as the rice sheets are delicate and can stick together. Continue until you have used all the filling.

After you have made all the rolls, place them in a greased heat-resistant dish with a little butter. For the topping, beat the eggs with sour cream and pour evenly over the rolls, then sprinkle grated mozzarella or cheese on top. Place the dish in the preheated oven at 180 degrees Celsius for about 20-25 minutes, or until the cheese on top is melted and has a nicely browned crust. This dish is delicious served warm, and the combination of textures and flavors makes it a meal you won't forget anytime soon.

 Ingredients: For about 20 pieces - 1 chicken breast, cut into small pieces and marinated in 3-4 tablespoons of soy sauce (I used boiled turkey meat left over from a soup, torn into strips, marinated in soy sauce and added to the soft vegetables, sautéed beforehand) - 4-6 tablespoons of canned mushrooms, drained or slices of fresh mushrooms, sautéed and drained - 1 carrot cut into thin strips (with a peeler) and then cut into smaller pieces or grated - 1/2 can of corn - 1/2 red bell pepper, diced - ground ginger + candied ginger, to taste (optional) - 1 cup of thick tomato paste / homemade red pepper paste - soy sauce (3-4 tablespoons for marinade + 1-2 tablespoons for vegetables, if necessary and to taste) For the omelette noodles: - 3 eggs or 1 egg + 2 egg whites (from the freezer) - chopped fresh parsley / dried, crushed - 1 teaspoon of sesame - chili flakes, to taste - 1 teaspoon of soy sauce Topping - 1-2 eggs - sour cream, to taste and preference - mozzarella / cheese, grated Others - 1 package of rice paper - salt - pepper, freshly ground - butter, for the heat-resistant dish - oil
