If you prefer to make it homemade, mix 250 g flour with 125 g cold butter cut into cubes, a pinch of salt, and 1-2 tablespoons of cold water. Quickly knead until you get a smooth dough. Roll out 2/3 of the dough in a floured tart pan, making sure to cover the edges well.

2. Pre-baking the crust: Preheat the oven to 180°C. Prick the dough with a fork to prevent puffing, then bake the crust for 15 minutes. It is important to pre-bake it to achieve a crispy texture.

3. Preparing the filling: In a large skillet, add the olive oil and butter. Sauté the small onions and crushed garlic over medium heat until translucent. Add the leeks and continue cooking for 5 minutes, stirring frequently.

4. Adding the wine and broth: Pour in the white wine and let it boil until the alcohol evaporates. Add the vegetable broth, peas, and tomatoes. Reduce the heat and let it simmer for 10 minutes, stirring occasionally.
