Ingredients:
- 500 g all-purpose flour (preferably type 650)
- 250 ml warm water
- 25 g fresh yeast or 7 g dry yeast
- 10 g salt
- 1 teaspoon sugar
- 30 ml olive oil
- 1 egg (for brushing)
- 100 g sesame or poppy seeds (optional)
Preparation Instructions:
1. If using a bread machine, add the ingredients in the following order: warm water, yeast (without dissolving), and sugar. Then add the flour, salt, and olive oil. Set the program for kneading and let the machine work its magic.
2. If you prefer to knead by hand, start by dissolving the yeast in warm water along with the sugar. Let the mixture sit for 5-10 minutes until it becomes frothy.
3. In a large bowl, add the flour and salt, mixing well. Make a well in the center and pour in the yeast mixture, followed by the olive oil. Knead the dough for 10-15 minutes until it becomes elastic and smooth.
4. Shape the dough into a ball and place it in a greased bowl, covering it with a damp towel. Let it rise for about 1 hour, or until it doubles in size.
5. Once the dough has risen, turn it out onto a floured surface and divide it into 12 equal pieces. Shape each piece into a rope about 30 cm long and twist it into a pretzel shape, joining the ends.
6. Place the pretzels on a baking sheet lined with parchment paper. Let them rise for another 20 minutes, covered with a towel.
7. Preheat the oven to 200°C. Before baking, brush the pretzels with beaten egg and sprinkle with sesame or poppy seeds if desired. This not only adds an appetizing appearance but also extra flavor.
8. Bake the pretzels for 25-30 minutes or until golden and crispy. Let them cool on a rack before enjoying.
Serving Suggestions:
Serbian pretzels are perfect warm, but you can also enjoy them cold. Serve them alongside cheeses, olives, or a garlic yogurt dip. For a more gourmet option, try filling them with a mixture of feta cheese, dill, and sun-dried tomatoes.
Variations:
For a spicy note, add dried herbs such as oregano or rosemary to the dough. You can experiment with different types of flour, such as whole wheat or rye, for varied texture and flavor.
