Ingredients:
- 1 kg of chicken (thighs and breast, cut into pieces)
- 3 tablespoons of extra virgin olive oil
- 1 large onion, finely chopped
- 2 cloves of garlic, crushed
- 1 red bell pepper, sliced
- 1 large carrot, sliced
- 400 g canned tomatoes (or peeled fresh tomatoes)
- 150 ml dry red wine
- 1 tablespoon of balsamic vinegar
- 1 teaspoon of sugar (to balance the acidity of the tomatoes)
- 2-3 sprigs of fresh rosemary (or 1 teaspoon of dried rosemary)
- 1 bay leaf
