To prepare a delicious meat and bean dish, start by washing the chosen meat, which can be beef or pork, depending on your preferences. After washing it, pat it dry with a paper towel to remove excess water, then cut it into suitable pieces so that it cooks evenly. Next, choose the vegetables you will use: peel the carrot and grate it on the large grater. The onion, once peeled, should be finely chopped to add extra flavor to the dish. The bell pepper and the yellow one should be seeded and diced, while the tomato should be peeled easily, after which you can chop it finely, taking care to remove the skin.

After you have prepared all the ingredients, take a large pot and heat the oil over medium heat. Add the pieces of meat and sauté them well on all sides until they become slightly browned. This step is essential, as browning the meat will add a more intense flavor. Once the meat is ready, add the previously prepared vegetables, except for the tomato, and let them sauté for about two minutes, stirring occasionally to prevent sticking to the bottom of the pot.

After the vegetables have softened a bit, add about four cups of water, then cover the pot with a lid. Let everything simmer on low heat for 20-25 minutes, so the meat becomes tender. After this interval, add the well-washed beans and the chopped tomato. Season with salt, pepper, and a teaspoon of sweet paprika to give the dish a hint of warmth. Continue cooking over medium heat, covered, until the meat and beans are fully cooked, and the broth has reduced sufficiently.

Finally, sprinkle dried thyme to intensify the flavors and add the tomato paste. Let the dish simmer for another 3-4 boils for all the ingredients to combine well. Turning off the stove will mark the completion of cooking, but leave the dish covered for 10 minutes to further develop its flavors. Serve with pickles, red onion, or any other side dishes you prefer, turning this dish into a true feast of flavors! Enjoy your meal!
