Quick Eggplant Salad
To prepare a delicious eggplant puree, we start by selecting fresh, medium-sized eggplants with smooth, shiny skin. These will bring a rich flavor and creamy texture to the final dish. We begin by peeling the eggplants, cutting them into thin strips, and then dicing them into cubes of about 2-3 cm. This step is essential as smaller cubes will cook evenly and soften more quickly.
After cutting the eggplants, we place them in a deep pan with hot oil. It's important to choose a good quality oil, such as olive oil or sunflower oil, to add extra flavor. Frying will be done over medium heat, stirring occasionally to prevent sticking. After about 10-15 minutes, the eggplants will start to soften and take on a golden hue.
Once the eggplants are cooked, we remove them from the pan and let them drain excess oil. This step is crucial to achieve a light and airy puree. Then, using a blender or a fork, we mash the eggplants until we obtain a smooth and creamy consistency, without large chunks.
After obtaining the puree, we add crushed garlic, which will give a strong and aromatic flavor. Fresh garlic is essential to provide a pleasant contrast to the sweetness of the eggplants. We continue with a pinch of salt and freshly ground pepper, adjusting the seasoning according to personal preferences.
To add a touch of freshness, we squeeze the juice of half a lemon into the eggplant puree, mixing well. The lemon juice will balance the flavor and prevent the eggplants from oxidizing, keeping them a pleasant hue. When the puree cools slightly, we add two tablespoons of natural yogurt, which will bring additional creaminess and a slightly tangy note. We mix everything with a spatula or wooden spoon, ensuring that the yogurt is well incorporated and the puree becomes homogeneous.
We serve the eggplant puree warm, but it is just as delicious cold, making it perfect as an appetizer or side dish. It can be accompanied by warm flatbreads, toasted bread, or fresh vegetables. This simple and healthy dish will surely impress anyone who tastes it. Enjoy it in the company of loved ones and savor its flavors!
