Preparation time: 20 minutes
Baking time: 40 minutes
Total time: 1 hour
Servings: 10-12

Ingredients

For the base:
- 190 g flour (with baking powder included)
- 170 g butter (at room temperature)
- 225 g sugar
- 2 large eggs
- 1 tablespoon grated orange zest

For the orange cream:
- 60 g sugar
- 1 tablespoon corn flour
- 129 ml fresh orange juice
- 1 tablespoon grated lemon zest
- 1 tablespoon grated orange zest
- 40 g butter
- 30 g icing sugar

For the chocolate cream:
- 125 g chocolate (dark or milk, as preferred)
- 2 egg yolks
- 1 tablespoon brandy
- 200 g whipped cream
- a pinch of salt
- a pinch of vanilla

For the glaze:
- 125 g chocolate
- 160 g sugar
- 2 egg yolks
- 2-3 tablespoons brandy
- 2 tablespoons butter

Instructions

Step 1: Preparing the base

1. Mixing the ingredients: In a large bowl, add the softened butter and sugar. Using a mixer, beat for about 3-4 minutes until the mixture becomes creamy and fluffy. Add the eggs one at a time, mixing well after each addition. Finally, incorporate the grated orange zest.

2. Adding the flour: Sift the flour directly into the bowl with the butter and egg mixture. Mix with a spatula or with the mixer set on low speed until the ingredients are well combined; do not overmix.

3. Baking: Pour the mixture into a greased and floured baking pan. Bake in a preheated oven at 175°C for about 40 minutes. Check with a toothpick; if it comes out clean, the base is ready! Let it cool completely.

Step 2: Preparing the orange cream

1. Mixing the ingredients: In a saucepan, combine the sugar with the corn flour. Add the orange juice and mix well. Place the saucepan over medium heat and bring the mixture to a boil, stirring constantly to prevent lumps from forming, until it thickens.

2. Adding the flavors: Once the cream has thickened, remove it from heat and add the orange and lemon zest. Let it cool, covering it with plastic wrap to prevent a crust from forming. Once cooled, add the butter and icing sugar, mixing well.

Step 3: Preparing the chocolate cream

1. Melting the chocolate: In a heatproof bowl, melt the chocolate over a double boiler or directly on low heat, adding a little milk to facilitate melting. Once melted, add the egg yolks, stirring continuously.

2. Finalizing the cream: Add the salt, brandy, and vanilla, mixing quickly. Let the cream cool, and when it reaches room temperature, fold in the whipped cream. Gently mix until the cream is smooth.

Step 4: Assembling the cake

1. Slicing the base: Once the base has completely cooled, slice it horizontally into two halves.

2. Moistening the base: If desired, you can sprinkle the base with a little milk (or milk with cocoa for an extra chocolate flavor) to make it softer.

3. Adding the creams: Place the first half of the base on a serving platter and spread the chocolate cream evenly. Then, place the other half of the base on top and add the orange cream.

4. Glazing: For the glaze, melt the chocolate with a little milk, then remove from heat and add the other ingredients, mixing quickly. Use the glaze to cover the cake evenly, allowing it to drip slightly down the sides for a rustic look.

Serving Suggestions

The two-tone cake pairs perfectly with a cup of fruit tea or a strong espresso. The orange cream adds a fresh note, while the chocolate provides a delicious contrast. If desired, you can add a few slices of orange or grated chocolate on top of the cake for elegant decoration.

Useful Tips

- Alcohol-free option: If you prefer an alcohol-free version, you can replace the brandy with rum essence or simply milk.
- Enhancing flavors: You can experiment with flavors by adding cinnamon or cardamom to the orange cream for a more exotic taste.
- Ideal drinks: This cake pairs wonderfully with a sweet wine or a fruit cocktail that will enhance the citrus flavors.

Calories and Nutritional Benefits

This cake is an indulgent choice, but it also offers nutritional benefits thanks to the orange juice, which is rich in vitamin C.
