- a few green onion tops, for decoration

Step-by-step preparation:

1. Boil the potatoes: Start by washing the potatoes well under cold running water. Then, place them in a pot with water and a little salt. Boil them with the skin on until tender, about 20 minutes. It is important not to overcook them, as you will want to mash them later. Once boiled, let them cool slightly, then peel them.
