To prepare a delicious cherry pudding, start by washing the cherries thoroughly under a stream of cold water, making sure to remove any impurities. Once washed, carefully remove the stems and extract the pits. This step is essential, as the pits can not only ruin the texture of the pudding but can also add a bitter taste. Once the cherries are prepared, set them aside in a bowl.

In another container, crack the eggs and beat them well with a whisk or mixer, as for an omelet. Add a pinch of salt and sugar to taste, ensuring you achieve a homogeneous mixture. Once the eggs are well beaten, start gradually incorporating the flour, stirring constantly to avoid lumps. It is important to be patient and ensure that the flour is completely integrated into the mixture.

After the flour is well incorporated, melt the butter over low heat and add it to the mixture, stirring continuously. Finally, add the milk, also being careful not to form lumps. The mixture should be fluid but slightly thicker than pancake batter.

Prepare a baking tray or dish that can be used in the oven, greasing it with a little butter to prevent sticking. Evenly place the cherries on the bottom of the tray, ensuring they are well distributed. Then, pour the egg and flour mixture over the cherries, completely covering them. For an extra flavor boost, add a few small pieces of butter on top of the mixture.

Preheat the oven to 180 degrees Celsius (temp 6) and place the tray inside. Let the pudding bake for about 45 minutes or until it becomes golden and firm to the touch. It is important not to open the oven door in the first 30 minutes to avoid affecting the baking process.

Once the pudding is ready, take it out of the oven and let it cool slightly before serving. You can decorate it with vanilla sugar for an appealing look and a sweet taste. Cherry pudding can be enjoyed warm or cold, making it an excellent choice for dessert or a snack. Don't hesitate to serve it alongside a scoop of ice cream or a vanilla sauce to enhance the flavors.
