I heated the solid, double-bottomed paella pan well, brought from Valencia, without adding a drop of oil. Once it was nicely heated, I tossed in the eggplants cut in half, along with a bell pepper sliced into semi-rings. I wanted to fry the vegetables first, not sauté them. Only towards the end, when the vegetables were almost tender as I wanted, I added a little olive oil and mixed well to give them life and shine. Then I added the shrimp and mussels, mixed well, and let it sit for a few minutes. Near the end, I added a whole bunch of parsley and 2 cloves of garlic, as well as green olives stuffed with peppers. Another 3-4 minutes of mixing followed. Only towards the end did I adjust the salt to taste; I didn't want to add it at the beginning. Generally, I tend to use very little salt in my cooking, almost none, much to the evident dismay of those I cook for (this happened on Sunday as well, at a table of 6, when I cooked a duck in the oven and a special dip with 5 types of mushrooms, both quite low on salt).
