Ingredients:
- 500 g of good quality flour
- 6 egg yolks
- 40 g of fresh yeast
- 200 g of butter or margarine
- 150 ml of milk
- 200 g of powdered sugar
- 1 teaspoon of freshly ground cinnamon
- 1 teaspoon of crushed cloves
- A pinch of salt
- Zest of one lemon
- 1 teaspoon of orange zest
- 150 g of candied and dried fruits (papaya, dried apricots, pineapple, bananas, raisins, candied orange peel, figs, cherries)
- 100 g of cranberries
- 50 g of walnuts, lightly toasted and chopped
- 50 g of dried plums, chopped
- Powdered sugar or cinnamon for decoration
- 1 teaspoon of rum essence
- 1 teaspoon of vanilla essence
- Cognac and rum for soaking the raisins (optional)
- 1 yolk for brushing

Preparation:

1. Preparing the ingredients: Start by sifting the flour into a large bowl. This step is essential for achieving an airy dough. If you want a panettone with enriched flavors, soak the raisins in rum and cognac for 30 minutes, then drain them.

3. Preparing the dough: In the bowl with flour, add the egg yolks, powdered sugar, cinnamon, cloves, a pinch of salt, lemon zest, orange zest, and the rum and vanilla essences. All these will add an unmistakable fragrance to your panettone.

4. Incorporating the liquid ingredients: Melt the butter in a bain-marie and let it cool slightly. Add the activated yeast and melted butter to the flour mixture. Knead the dough, gradually adding the warm milk, until you obtain a smooth and elastic composition.

7. Shaping and baking: Once the dough has risen, gently knead it and shape it into a ball. Place it in a panettone mold or a baking dish lined with paper. Let it rise again, covered, for another 30-45 minutes. Meanwhile, preheat the oven to 180°C.

8. Brushing and baking: Before placing the panettone in the oven, brush it with the beaten yolk. Bake for 40-50 minutes, or until golden and passes the toothpick test.

9. Cooling and serving: Once the panettone is ready, let it cool completely on a rack. You can decorate it with powdered sugar or a little cinnamon for a festive look.

Serving suggestions: Panettone pairs excellently with a cup of coffee or tea, but it can also be a delicious base for a reinvented tiramisu.
