Preparation time: 20 minutes
Baking time: 30 minutes
Total time: 50 minutes
Number of servings: 12

### Ingredients for the base:
- 8 egg whites
- 250 g sugar
- 300 g ground nuts
- 1 teaspoon vanilla essence (optional)
- a pinch of salt

### Ingredients for the filling:
- 300 g sour cream
- 200 g powdered sugar
- 1 package of gelatin (10 g)
- 2 tablespoons cold water

### Preparing the base:

1. Beat the egg whites: In a large bowl, add the 8 egg whites and a pinch of salt. Use an electric mixer to beat them on medium speed until frothy. Then, gradually increase the speed and continue beating until you achieve a stiff peak.

2. Add the sugar: While continuing to beat, gradually add the sugar. It is important not to add it all at once, allowing the egg whites to incorporate the sugar and become glossy. You will know they are ready when stiff peaks form.

3. Fold in the nuts: Use a silicone spatula to add the ground nuts, gently folding them in with up-and-down motions. This will help maintain the air in the egg white foam.

4. Bake the base: Preheat the oven to 180°C. Meanwhile, line a 30x40 cm baking tray with parchment paper. Pour the mixture into the tray and level the surface with the spatula. Bake for about 30 minutes or until the surface is golden and a knife inserted in the center comes out clean.

### Preparing the filling:

1. Prepare the gelatin: In a small bowl, hydrate the gelatin in the 2 tablespoons of cold water. Let it sit for about 5 minutes, then gently heat it in a bain-marie or microwave, without boiling, until completely dissolved.

2. Mix the sour cream: In another bowl, combine the sour cream with the powdered sugar and vanilla essence. Use a mixer to achieve a smooth cream.

3. Incorporate the gelatin: Add the dissolved gelatin to the sour cream mixture, mixing well to ensure it is evenly distributed.

### Assembling the cake:

1. Cool the base: Once the base is baked, let it cool completely in the tray.

2. Add the filling: Once the base is cool, carefully pour the sour cream mixture over it, leveling the surface well.

3. Chill the cake: Leave the cake in the refrigerator for at least 2 hours for the filling to set.

### Serving and variations:

For serving, cut the cake into squares or triangles, and you can top it with some roasted nuts or a drizzle of caramel sauce for an attractive look.

For a personal touch, you can try adding some melted dark chocolate pieces to the filling or replacing the nuts with ground almonds for a different flavor.

This Vulcan Cake will surely become a family and friends' favorite, thanks to the combination of textures and delicious taste. Enjoy every slice!
