Total time: 25 minutes
Servings: 4 (approximately 20 poffertjes)
Dutch Poffertjes are a traditional Dutch dessert, easy to make and incredibly tasty. These fluffy mini pancakes are perfect for a gathering with friends or to be served as a sweet snack with family. Flavorful, fluffy, and easy to customize, poffertjes are a real delight.
Ingredients:
- 250 g all-purpose flour
- 10 g fresh yeast (or 5 g dry yeast)
- 2 tablespoons sugar
- A pinch of salt
- 2 eggs
- 500 ml lukewarm milk
- 50 g melted butter (plus extra for cooking)
- Powdered sugar for serving
- Vanilla extract or cinnamon (optional, for extra flavor)
Step 1: Activating the yeast
In a small bowl, mix the yeast with 100 ml of lukewarm milk and a teaspoon of sugar. Let the mixture sit for 10 minutes until it becomes frothy. This step is essential for ensuring good fermentation, which will make the poffertjes fluffy and airy.
Step 2: Combining the ingredients
In a large bowl, sift the flour, add the salt and the remaining sugar. Make a well in the center and add the activated yeast mixture, eggs, and melted butter. Start gradually incorporating the flour using a spatula or whisk. Gradually add the remaining milk, stirring continuously until you achieve a smooth mixture that is slightly thicker than pancake batter.
Step 3: Resting the batter
Cover the bowl with a clean towel and let the batter rise in a warm place for 30-45 minutes. This step will allow the yeast to work, and the batter will become fluffier.
Step 4: Cooking the poffertjes
Once the batter has risen, heat a special poffertjes pan or a non-stick skillet over medium heat. Add a little butter to each cavity of the pan. Use a squeeze bottle or a spoon to pour the batter into the poffertjes molds. Cook for 2-3 minutes on each side until golden and fluffy. Flip them using a fork or spatula.
Step 5: Serving
After cooking all the poffertjes, serve them warm, dusted with powdered sugar. You can also add a splash of vanilla extract or cinnamon for an even more aromatic flavor. A delicious variation is to serve them with maple syrup, jam, or fresh fruit.
Practical tips:
- If you don’t have a special poffertjes pan, you can use a regular skillet, but make sure to form small portions.
- You can experiment with various flavors by adding lemon or orange zest to the batter for a fresh taste.
Poffertjes are a quick and simple dessert, perfect to enjoy anytime. Whether you make them for a special occasion or just to treat yourself, these mini Dutch pancakes will surely bring smiles to your loved ones' faces. Enjoy every bite!
