Cheese Pie
We start by preparing the dough for the pie, an essential step that will determine the final texture and taste of the dish. In a large bowl, we mix the lard using a mixer set to medium speed until it becomes creamy and fluffy. It is important for the lard to be at room temperature for better incorporation. We continue to add one egg yolk at a time, mixing very well after each addition to ensure perfect homogenization. This step will give the dough a rich flavor and a fine texture.
After we have integrated all the egg yolks, we take care of the dry ingredients. In another bowl, we combine the flour with the dry yeast and baking powder. This combination will help the dough rise during baking, giving it an airy consistency. We gradually add the flour mixture to the lard composition, mixing constantly. Then, we start incorporating the warm milk, little by little, until we obtain a soft but not sticky dough. It is important not to add all the milk at once, so we can control the consistency of the dough.
After we have obtained the dough, we divide it into four equal portions. Each portion will be rolled out into a very thin sheet using a rolling pin. This technique will allow the sheets to be flaky and bake evenly. Now we can prepare the fillings, which are essential for giving the pie a special flavor.
For the savory filling, we mix the cheese with the four beaten egg whites, a small yogurt, and the two tablespoons of semolina, adding cumin for extra flavor. If you prefer the sweet filling, then finely ground nuts are combined with the beaten egg whites, sugar, and a bit of rum, creating a fine and delicious paste.
Each sheet of dough is brushed with apricot jam, then the desired filling is added, followed by another sheet. We continue this process, alternating layers of dough and filling until we finish the ingredients. Finally, the pie is left to rest for 30 minutes to allow the flavors to meld and the composition to stabilize.
In the end, we bake the pie in a preheated oven at 180 degrees Celsius for about 30-35 minutes, or until it becomes golden and crispy. The enticing aromas will fill the entire house, and the final result will be a delicious pie, perfect for enjoying with loved ones.
