Lentil Patty
Lentils, a versatile and healthy ingredient, are the ideal base for creating a tasty and nutritious dish. Start by washing the lentils under a stream of cold water, making sure to remove all impurities. After washing the lentils, boil them in a pot of water, adding a teaspoon of salt for extra flavor. Lentils cook quickly, so soaking is not necessary. Boil them for about 15-20 minutes until they are soft but not completely mushy. After boiling, drain the lentils and let them cool.
Meanwhile, prepare the other ingredients. Separate the eggs, placing the egg whites in a large bowl and the yolks in another. Use an electric mixer to beat the egg whites with a little salt until you achieve a firm and glossy foam. Then, add the yolks, carefully folding in with a spatula so as not to lose the air from the egg whites.
Next, add the semolina and breadcrumbs, which will contribute to a pleasant texture of the loaf. Season the mixture with salt, pepper, and, if desired, with herbs like thyme or oregano. Don't forget to add finely chopped parsley, which will bring a fresh note and a special flavor. Finally, incorporate the well-drained lentils, mixing gently to avoid crushing the grains.
Prepare a loaf pan, generously lining it with breadcrumbs to prevent sticking. Pour the mixture into the pan, leveling the surface with a spatula. Preheat the oven to 180 degrees Celsius and place the pan inside. Let the loaf bake for about 35 minutes or until it is golden and firm to the touch.
Once the loaf is ready, remove it from the oven and let it cool in the pan for a few minutes. Then, turn it out onto a cutting board and let it cool completely. Once cooled, you can slice it. This lentil loaf is a delicious alternative to traditional recipes, suitable for both festive meals and a healthy lunch. Serve it alongside a fresh salad or with a yogurt sauce for extra flavor.
