Baking time: 30 minutes
Total time: 5 hours (including cooling time)
Number of servings: 12
Ingredients
For the base:
- 5 eggs
- 150 g sugar
- 1/2 cup flour (approximately 70 g)
- 30 g cocoa
- 200 g nuts (ground)
- 50 g butter (melted)
- 1 teaspoon baking powder
- rum essence
For the ganache:
- 250 g dark chocolate (70% cocoa is ideal)
- 200 ml liquid cream
For the whipped cream:
- 400 ml liquid cream
- 50 g sugar
- 50 g nuts (broken into large pieces)
For decoration:
- 200 ml liquid cream
- 100 g dark chocolate (for decoration)
Preparation
1. Preparing the base:
Start by preheating the oven to 200 degrees Celsius. In a large bowl, crack the 5 eggs and add the 150 g of sugar. Use a mixer to beat the eggs with the sugar until the mixture doubles in volume and becomes frothy. This is the perfect moment to create an airy base for your cake.
- Tip: Make sure the eggs are at room temperature for better foam.
2. Adding dry ingredients:
Gradually add the ground nuts. In another bowl, sift the flour, cocoa, and baking powder. Start incorporating the flour mixture into the egg mixture using a spatula. Mix gently, with up-and-down movements, to avoid losing air in the composition.
3. Including butter and flavors:
Pour in the melted and cooled butter along with the rum essence, and mix gently. The result should be a slightly thicker but very airy batter.
4. Baking the bases:
Divide the batter into 3 equal parts. Line a 20/20 cm baking tray with parchment paper and pour the first portion of batter. Bake each layer for 8-10 minutes, or until lightly browned. Let them cool on a rack, without stacking, to prevent steaming.
5. Preparing the ganache:
In a saucepan, heat the liquid cream until just about to boil. Add the chocolate chopped into small pieces. Stir well until the chocolate is completely melted and the mixture is smooth. Allow it to cool for a few hours or, preferably, prepare it a day in advance.
6. Nut whipped cream:
Caramelize 50 g of sugar in a pan until it turns golden. Add the broken nuts and stir quickly, then pour the mixture onto a piece of parchment paper. Let it cool completely. Once hardened, coarsely grind the caramelized nuts.
- Tip: Use a food processor to save time, or if you don’t have one, place the nuts in a thick bag and use a meat mallet.
7. Whipping the cream:
In a cold bowl, whip the liquid cream until it becomes firm. Add the caramelized nuts and mix gently to combine.
8. Assembling the cake:
On each layer of the base, spread a thin layer of ganache, followed by a layer of caramel whipped cream. Stack the layers on top of each other to form a tall cake. Place the cake back in the removable tray and cover it with plastic wrap. Refrigerate for at least 4-5 hours or, ideally, overnight.
9. Decorating the cake:
Finally, whip 200 ml of liquid cream and decorate the cake with it. You can also add chocolate hearts for a festive look.
Serving suggestions:
The Julia cake pairs perfectly with a fragrant tea or a strong espresso. You can also accompany each slice with a berry sauce for a delicious contrast.
Variations:
- You can experiment with different types of nuts, such as almonds or hazelnuts.
- For a more intense flavor, replace some of the dark chocolate with milk chocolate.
