Quince Jam
Quinces, these aromatic and flavorful fruits, are ideal for being transformed into a delicious jam or jelly. Start by washing the quinces well, removing the fuzz from their skin. This step is essential to ensure that your jam will have a pure taste and a smooth texture. After washing them, peel them and cut them into cubes or grate them with a large grater to obtain a homogeneous paste. This method will help release the natural juices of the quinces, essential for the final flavor of the jam.
In a large pot, add the grated quinces, the juice of a fresh lemon, and enough water to cover the fruits. Place the pot over medium heat and let it boil, stirring occasionally to prevent sticking. The quinces will start to soften and release their aroma. This process may take about 20-30 minutes, depending on how ripe the quinces are. This is the time when you can add the sugar. The amount of sugar can vary based on your preferences, but a ratio of about 1 kg of sugar to 2 kg of quinces is a good starting point.
Continue to boil the mixture, stirring constantly to ensure that the sugar dissolves completely. After a few minutes, you can check the consistency of the jam. Take a plate and put a few drops of the mixture on it; let it cool a bit. If the jam sets, it is a sign that it is ready. If not, let it cook for a few more minutes and repeat the test.
When the jam is ready, carefully pour it into clean, sterilized jars, leaving a little space at the top. Cover the jars with airtight lids and, to ensure the best preservation, wrap them in a blanket until they cool completely. This process helps create an effective seal, preventing air from entering and keeping the fresh taste of the quinces. Label each jar with the date of preparation, and if you wish, you can also add a note about the special flavor of your jam. So, enjoy this traditional recipe and savor the result of your delicious work throughout the year!
