To create a delicious and refined dessert, we start with an essential step: grinding the biscuits. Using a blender or food processor, we turn these biscuits into fine crumbs, which will form the base of our dessert. This step is crucial to achieving a uniform and crunchy texture that will perfectly contrast with the creaminess of the filling.

Once the biscuits are ground, we transfer them to a bowl and add the melted butter, along with the honey dissolved in two teaspoons of warm water. We mix the ingredients well, ensuring that each crumb of biscuit is coated with butter and honey, which will give a special flavor and a pleasant consistency to the base.

Next, we take care of the gelatin. We add 7 grams of gelatin to 70 ml of water, stirring gently to prevent lumps from forming. We let the gelatin hydrate for 10 minutes at room temperature, and then we place it in a bowl over a double boiler. We stir carefully until the gelatin turns into a clear and uniform liquid.

Meanwhile, we focus on the whipped cream. In another bowl, we whip the cream with the vanilla sugar until the mixture becomes firm enough that the mixer blades leave visible traces. This will add a layer of lightness and delicacy to our dessert.

Once the gelatin has cooled slightly, we gradually incorporate it into the creamy yogurt, mixing with a spatula to ensure no lumps form. The next step is to add the previously prepared whipped cream, also gradually, to maintain a light and fluffy texture.

Now, let’s move on to assembling the dessert. Using special dessert rings, we press the mixture of biscuits, butter, and honey into the bottom of each ring, ensuring it is well leveled. Then, we carefully add a teaspoon of the yogurt and whipped cream mixture, smoothing the surface with the back of a spoon. We continue this process until the molds are completely filled, taking care to achieve a smooth and attractive surface.

After we finish assembling the dessert, we place it in the fridge for 3-4 hours, during which it will set and take on a perfect shape. Once the time has passed, we carefully remove the rings, resulting in an elegant dessert ready for decoration.

To add a splash of color and flavor, we decorate the dessert with raspberry sauce and caramelized berries, which will not only enhance the flavor but also turn our dish into a true culinary work of art. Enjoy every bite!
