Twice Baked Potatoes
To prepare this delicious stuffed potato recipe, we start by washing the potatoes well, ensuring that we remove all the dirt from their surface. After this essential step, we place them in a preheated oven at 175 degrees Celsius, where we will bake them in their skins for about an hour. This baking method will allow the potatoes to retain their natural flavor and soft texture, making them perfect for stuffing.
While the potatoes are baking, we take care of the bacon or kaiser. We cut the meat into small cubes so that it fries evenly. We add them to a heated pan, where we let them fry until they become crispy and golden. Once they are ready, we drain the excess fat to achieve a lighter filling, but full of flavor.
After the potatoes are well baked, we take them out of the oven and let them cool slightly. With a sharp knife, we carefully cut them in half lengthwise. Using a teaspoon, we carefully scoop out the flesh, being careful not to break the skins, as they will be the base of our filling.
The potato flesh, now at room temperature, is mixed with sour cream, milk, butter, salt, and pepper until we obtain a creamy and homogeneous composition. We then add 3/4 of the fried bacon and 3/4 of the chopped fresh herbs, mixing carefully not to crush the potatoes. This rich and flavorful filling will turn every bite into a true delight.
Using a spoon, we generously fill the potato skins with the prepared mixture. As a final touch, we place a thin slice of cheddar cheese on each stuffed potato to add extra flavor and a delicious golden crust. We put the stuffed potatoes back in the oven for another 15 minutes, during which the cheese will melt and form an appetizing crust.
After we take them out of the oven, we sprinkle the rest of the bacon or kaiser and the remaining herbs on top, which will provide not only a pleasant appearance but also a fresh taste. These stuffed potatoes are delicious both warm and at room temperature, and the combination of flavors is simply irresistible.
