The flour is mixed with salt and sifted well to eliminate any lumps, resulting in a fine texture. Then, we add the lard and begin to knead the ingredients between our fingers until we achieve a crumbly consistency, similar to wet sand. This step is essential to ensure a light and fluffy dough. In another bowl, we dissolve the yeast in warm water and let it rise for about 10 minutes until a foam forms on top. Once the yeast is active, we add it to the flour and lard mixture. We start to mix gently, gradually adding water until we obtain a soft, non-sticky dough that is easy to roll out. This dough should be elastic and not stick to the hands. After obtaining the dough, we cover it with a clean towel and let it rise in a warm place for 30-40 minutes until it doubles in volume.

Meanwhile, we take care of the vegetables. We wash the vegetables well under a stream of cold water, then carefully peel them. We slice the vegetables into thin rounds or cubes, depending on preferences. The garlic is crushed with a knife or finely chopped, making sure to release its intense flavors. In a bowl, we mix the vegetables with salt, pepper, paprika, and finely chopped parsley, ensuring that all the ingredients are well incorporated.

We prepare a round tray (32 cm in diameter) or a rectangular one (32 cm x 27 cm). We take the risen dough and, using our fingers, spread it evenly in the tray, covering the bottom and edges well. We brush the dough with a little oil to prevent the vegetables from sticking and to add a touch of flavor. We evenly place the seasoned vegetables on top of the dough, making sure that each portion will be full of taste.

After arranging the vegetables, we place the tray in the preheated oven at 180 degrees Celsius and bake for about 35-40 minutes, or until the edges become golden and crispy. Once the pie is baked, we take it out of the oven and let it cool slightly. It can be served warm or cold, cut into squares or smaller slices, depending on preferences. This recipe brings a delicious mix of flavors, perfect for any occasion, being an excellent choice for family meals or gatherings with friends.

 Ingredients: 500 g flour, 25 g fresh yeast or 1 packet of dry yeast, 4 tablespoons of olive oil, 50 g lard, 3 bell peppers sliced, 3 green onions chopped, 3 ripe tomatoes sliced, 1 clove of garlic crushed, finely chopped parsley, 1 teaspoon sweet paprika, salt and pepper to taste, approximately 250 ml water (depends on the flour), 1 red onion sliced, olives to taste.
