To prepare a delicious recipe for meat rolls stuffed with mushrooms and carrots, we will start by preparing the necessary ingredients. First, we need a large onion, which will be finely chopped. The onion will be sautéed until it becomes translucent, being careful not to brown it too much, for about 3-4 minutes.

Meanwhile, we will prepare the mushrooms. These can be chosen according to preferences - champignon mushrooms are a popular choice. They are sliced thinly and added over the sautéed onion. The mushrooms will absorb the flavors and soften, allowing them to cook for about 5 minutes. After turning off the heat, a pinch of seasoning is added to enhance the flavor. It is important to mix the composition well to ensure the flavors blend.

Now we take care of the meat. Let’s choose a suitable type of meat for the rolls, such as pork or chicken ham. The meat is sliced thinly, similar to schnitzel, and lightly pounded with a meat mallet to tenderize it. Once the slices are prepared, we take one and a half tablespoons of the mushroom mixture and spread it evenly on each slice of meat. To add a crunchy note, we can add sliced carrots lengthwise, preferably two carrots depending on the size of the meat slices.

We carefully roll the slices of meat, forming small packages. It is important to ensure that the filling does not come out during cooking; therefore, each roll will be pierced with a toothpick. This will ensure that the rolls remain well closed. After we have finished forming all the rolls, we place them in a baking dish. Over the rolls, spices are sprinkled to taste, and among them, sliced carrots and a few pieces of butter can be placed for extra flavor.

To finish the dish, wine is added to the dish, which will provide a rich taste and help tenderize the meat during baking. The dish is placed in the preheated oven at a medium temperature and left to cook for about 45 minutes. It is recommended to turn the rolls occasionally so that they brown evenly on all sides. If the wine reduces too much before the rolls are fully cooked, we add a little extra wine to prevent the meat from drying out.

When the rolls are ready, we take them out of the oven and remove the toothpicks. These meat rolls stuffed with mushrooms and carrots are now ready to serve, having a tender texture and delicious taste.
