Cauliflower is a versatile vegetable, full of nutrients and with a pleasant texture, that can become the main ingredient of a delicious and healthy recipe. We start by cleaning the cauliflower of stems and leaves, being careful to keep as many florets intact as possible. These florets come apart easily, and then we place them in a bowl of cold water, where we let them hydrate and remove any impurities. It is important to wash them well to ensure they are clean and ready to cook.

After washing the cauliflower, we prepare the steamer. If we don’t have a special device, it’s not a problem. We can improvise with a pot of water, placing a metal strainer inside, ensuring it does not touch the water. We cover the cauliflower with parchment paper, and then put aluminum foil on top, trying to seal it as best as possible so that the steam does not escape. It is essential that the steam stays inside to cook the cauliflower evenly.

We put water in the steamer or in our improvised pot, letting it boil. Then, we place the cauliflower florets in the basket of the device or in the strainer. We close the lid and let the cauliflower steam until it becomes tender but not overcooked. This process will keep the white color and crunchy texture of the vegetable.

While the cauliflower is cooking, we take care of the other ingredients. We peel the onion and garlic, chopping them finely for better incorporation into the puree. Once the cauliflower is ready, we transfer it to a bowl or into the bowl of a food processor. Here we add the soft butter, creamy yogurt, rich sour cream, grated parmesan, and the previously prepared onion and garlic. We season with salt and pepper to taste, to enhance the flavors.

Using an immersion blender or a food processor, we turn everything into a fine and smooth puree. This step is essential for achieving a velvety texture that will make the dish special. After obtaining the puree, we can play with flavors by adding fresh herbs such as parsley, rosemary, basil, or thyme, depending on personal preferences. Personally, I chose to use rosemary, which adds a note of freshness and an unmistakable aroma.

This cauliflower puree recipe is not only a delicious side dish but also a healthy option, full of vitamins. It can be served alongside meat, fish, or can be enjoyed simply as a vegetarian dish. It is ideal for both special occasions and everyday meals, being easy to prepare and extremely tasty.

 Ingredients: 1 smaller cauliflower, 3-4 tablespoons of Greek yogurt (or any thicker yogurt), 2-3 tablespoons of butter, 1 tablespoon of thick sour cream, salt and pepper to taste, grated parmesan to taste (I used about half a cup of 200 ml), 1 finely chopped onion, 2 cloves of garlic (or one if you don't like a strong flavor).
