Cheese pie
To prepare a delicious cheesecake pie, the first step is to preheat the oven to 180 degrees Celsius. While the oven is heating up, let the puff pastry thaw at room temperature, which will make it easier to roll out. Once the dough is ready, cut it into two equal parts, preparing for the assembly of the pie.
Now, let's take care of the cream cheese. In a large bowl, beat the four egg whites with a pinch of salt until you get a firm foam. It is essential that the egg whites are well beaten, as they will provide volume and aeration to the cream. Gradually add the sugar and vanilla sugar, continuing to mix until the mixture becomes glossy and you no longer feel the sugar crystals. In another bowl, pour in the four containers of fluffy cheese (Delaco cheese is an excellent choice, but you can use any cheese you prefer) and mix it well with the two egg yolks. Here it is important to homogenize the mixture well so that the cheese acquires a fine texture.
After the cheese is well mixed with the yolks, gradually incorporate the meringue obtained from the egg whites, being careful to mix with a spatula, using gentle up and down movements. This will ensure that the cream remains airy and fluffy.
Prepare a baking tray lined with parchment paper and place the first part of the puff pastry, spreading the cream cheese evenly on top. To add a touch of flavor, sprinkle candied orange and lemon peel here and there, as well as a few raisins, which will provide a sweet and fruity note. Cover everything with the second half of the dough, removing the excess dough from the edges. Brush the pie with a beaten egg to achieve a golden and appetizing crust. With a fork, prick the dough here and there to allow steam to escape during baking.
Place the pie in the preheated oven. At first, bake it at high heat for 5-10 minutes to allow the dough to rise, then reduce the temperature to medium and continue baking for 15-20 minutes, until the pie is golden and well cooked.
