If you are looking for a quick and simple dessert, plum cake is the perfect choice for you. This recipe not only combines the warm and comforting flavor of autumn, but it is also an excellent way to use ripe plums from the garden or market. Whether you prepare it for a special occasion or simply to enjoy a sweet moment, this cake will surely become a family favorite.
Necessary ingredients:
- 200 g butter or margarine (at room temperature)
- 3 eggs
- 200 g sugar
- 1 vanilla essence or 1 packet of vanilla sugar
- 200 g flour
- 1 teaspoon of ammonia quenched with lemon juice
- 1.5 - 2 kg ripe plums
- 50 g vanilla sugar (for topping)
Step 1: Preparing the ingredients. Make sure the butter is soft by letting it sit at room temperature for about 30 minutes. Also, preheat the oven to 180°C (350°F) and line a baking tray with baking paper or grease it with butter to prevent sticking.
Step 2: Mixing the composition. In a large bowl, add the soft butter and sugar. Use an electric mixer to combine them until you achieve a fluffy cream. This process is essential to ensure a light cake. Add the eggs one by one, making sure each egg is well incorporated before adding the next. Add the vanilla essence or vanilla sugar.
Step 3: Integrating the dry ingredients. In another bowl, mix the flour with the ammonia quenched with lemon juice. This step will help the cake rise beautifully and have a light texture. Add the flour mixture to the butter composition, mixing with a spatula until you obtain a homogeneous dough.
Step 4: Preparing the plums. Wash the plums and cut them in half, removing the pits. You can use plums of different varieties - the sweet and ripe ones will add a note of flavor and a pleasant contrast to the dough.
Step 5: Assembling the cake. Pour half of the dough into the prepared tray and place the plums on top. Add the rest of the dough and level it gently with a spatula. Sprinkle the vanilla sugar on top to create a delicious crust.
Step 6: Baking. Place the tray in the preheated oven and bake the cake for 35-40 minutes, until it turns golden and a toothpick inserted in the middle comes out clean. Let the cake cool in the tray for 10 minutes, then you can transfer it to a cooling rack.
Serving suggestion: You can serve the cake with a dollop of sour cream or vanilla ice cream to enhance the flavors. It offers a rustic and delicious touch by sprinkling some chopped nuts on top before serving.
Personalized version: If you want to add a twist to the recipe, you can also add cinnamon to the flour mixture or replace the plums with apples or peaches, depending on your preferences.
With this plum cake, you will bring to the table not just a dessert, but also a touch of nostalgia and warmth of autumn. Enjoy every slice and savor the flavors of this simple yet flavorful dessert!
