Preparing the Cake

Step 1: Preparing the Biscuit Base
Start by crushing 300 g of biscuits until you achieve a fine texture. It is important to choose quality biscuits, as they will form the base of the cake. Set aside two handfuls of the crushed biscuits to use later as decoration.

In a bowl, mix the crushed biscuits with 180 g of melted margarine until the mixture becomes homogeneous. Pour this mixture into a detachable-walled tray, pressing well with a spoon to form an even layer. This will be the first layer of the cake.

Step 2: Preparing the Syrup
To give the cake a special flavor, prepare the syrup. In a small bowl, mix half a glass of water with 3 tablespoons of sugar and the vanilla essence, stirring well until the sugar completely dissolves. This syrup will soften the biscuits in the second layer, giving them a delicious flavor.

Step 3: Preparing the Cream
In a pot, bring 750 ml of soy milk to a boil along with 6 tablespoons of sugar. In a separate bowl, mix the remaining cold milk (250 ml) with 3 tablespoons of starch, 1 tablespoon of flour, and 3 tablespoons of cocoa. Once the milk starts to boil, gradually add the starch mixture, stirring continuously to avoid lumps.

Once the cream thickens, add the dark chocolate and rum essence, stirring until the chocolate completely melts and the cream becomes smooth and creamy.

Step 4: Preparing the Glaze
In a small pot, melt 20 g of dark chocolate together with 1 tablespoon of margarine. Add 3 tablespoons of cocoa, 3 tablespoons of sugar, 2 tablespoons of water, and 1 teaspoon of rum essence. Mix well until you obtain a smooth and shiny glaze.

Step 5: Assembling the Cake
Make sure the first biscuit layer is well set. Place a layer of cream on top of it, then add two layers of uncrushed biscuits, which you will quickly soak in the prepared syrup. Continue with another layer of cream, followed by the glaze.

For an elegant look, sprinkle the reserved crushed biscuits on top and decorate with chocolate roses. Place the cake in the refrigerator for a few hours so that all the flavors blend perfectly.

Chef's Tip
For an even richer taste, you can add a little coffee essence to the cream, which will enhance the chocolate flavor. Also, make sure that when serving, the cake is well chilled, making it easier to cut and look spectacular.
