1. Preparing the ingredients: Start by cutting the pork belly into cubes of about 2-3 cm. This size will allow for even melting and a crispy texture of the cracklings. If the pork belly has too much meat, the cracklings will be less crispy but more flavorful.

2. Frying the pork: Place the cubes of pork belly in a deep pot over medium heat. It is important not to overcrowd the pot, as it will release fat and fry evenly. Stir constantly with a wooden spoon to prevent sticking.

3. Reducing the heat: Once the pork has started to release fat, reduce the heat to low. This step is essential to allow the pork to melt slowly, thus achieving tender and crispy cracklings. Continue to stir occasionally.

4. Cooking the cracklings: Let the pork simmer on low heat for 30-40 minutes. You will notice that as time passes, the cracklings become more golden and crispy. Test a piece, and when it is browned on the outside and crispy, it’s time to remove them.
