To prepare a delicious cheese pie, start by gathering all the necessary ingredients. You will need milk, sugar, oil, eggs, baking soda, vinegar, flour, and cheese. Begin by pouring the milk into a pot, add the sugar and oil, then place the pot over medium heat. Stir constantly until the mixture reaches boiling point. This is the crucial stage, as it will help activate the flavors and homogenize the ingredients. Once it starts boiling, remove the pot from the heat and let it cool slightly, so that you do not add the egg to the mixture when it is too hot.

After the mixture has cooled, add the egg and the baking soda mixed with vinegar. Mix well until all the ingredients are fully integrated. Now, it’s time to gradually add the flour. Start with a smaller amount and knead the dough. Continue adding flour until the dough becomes elastic and no longer sticky. It is important to ensure that the dough is well-kneaded, as this will affect the texture of your pie.

While the dough rests, you can prepare the filling. In a separate bowl, mix the cheese with sugar, one egg, vanilla, and, if you like, a little sour cream for a creamier texture. Make sure all the ingredients are well homogenized and that the filling has a pleasant taste. Set it aside for now.

Divide the dough into two equal balls. Start rolling the first ball on a floured surface, being careful to obtain a thin sheet. Place the sheet of dough in the baking tray, ensuring that you spread it evenly on the bottom. Next, pour the cheese filling over the dough, distributing it evenly.

After that, take the second ball of dough and roll it out just as thinly. Cover the filling with this sheet of dough, then brush the surface with a beaten egg for a golden and appetizing crust. Use a fork to make a few holes in the dough so that steam can escape during baking.

Preheat the oven to 160 degrees Celsius and place the pie inside. Let it bake for about 30 minutes or until it becomes golden and crispy. Once it is ready, remove the pie from the oven and let it cool slightly. Finally, dust it with powdered sugar for an elegant appearance and a sweet taste. For the filling we need: 500 g of cottage cheese, 1 cup of sugar, raisins, 2 packets of vanilla sugar, 2 eggs, 2 tablespoons of flour, 2 teaspoons of semolina.
