Penne with Chorizo, Vegetables and Manchego

Ingredients: 6 slices of chorizo cut into pieces to taste 1 tablespoon olive oil 1 tablespoon unrefined pumpkin oil (you can substitute with unrefined peanut oil or extra virgin olive oil) 1 teaspoon whole grain mustard salt and freshly ground black pepper to taste a pinch of chili flakes 1/2 red onion chopped small 1 tomato chopped 2 tablespoons finely chopped basil 60 g grated Manchego (you can substitute with Parmigiano Reggiano) 150 g penne pasta a pinch of salt

To prepare a delicious and flavorful dish, I suggest starting with the essential steps. In a large pot, add at least 1 liter of water and bring it to a boil over high heat. It is important that the water is well salted, so don't forget to add a tablespoon of salt before adding the pasta. This step will help enhance the flavor of the pasta.

Meanwhile, in a deep skillet, heat a few drops of olive oil over low heat and add thinly sliced chorizo. Fry for a few minutes, about 2-3, until the chorizo becomes slightly crispy and releases its intense flavors. Once ready, remove it from the skillet and set it aside. In the remaining oil, flavor the dish by adding pumpkin oil, mustard, salt, pepper, and chili, stirring well to combine all the ingredients.

In another bowl, finely chop the onion, dice the tomato, and add fresh basil leaves. This combination will add a touch of freshness and flavor to the dish. When the water is boiling vigorously, add the pasta and cook according to the package instructions until al dente, meaning firm to the bite but cooked.

After the pasta is ready, drain it and transfer it to a large bowl. On top of it, add the fried chorizo along with the spiced oil, followed by the vegetable mixture and grated cheese. Carefully mix everything so that the ingredients combine evenly and the flavors blend harmoniously.

If you want to impress, you can reserve a little cheese to use for decoration before serving. This detail will add an attractive look to the dish and enhance the flavor. Serve immediately to enjoy all the fresh and delicious flavors. This recipe is ideal for two servings but can be easily adapted for more people. Enjoy your meal!
