To prepare a delicious cream puff, we will start by organizing the necessary ingredients and ensuring we have all the utensils at hand. This recipe consists of two main parts: the dough sheets and the cream.

In the first step, we will prepare composition 1. This is divided into two equal pieces, which we will roll out on a floured surface to obtain two thin sheets. These sheets need to be large enough to fit into a baking tray. Then, we will move on to composition 2, which is also divided into two pieces, following the same rolling process.

Once we have both sets of sheets, we take one sheet from composition 1 and place it over one sheet from composition 2. This layer of sheets will be carefully folded, just like when preparing a hajos, to form a firm package. After doing this, we put the package in the fridge for 30 minutes to cool and firm up a bit, thus facilitating further rolling. After this period, we will roll out the dough again, being careful to maintain the same folding direction. After the second rolling, we let it cool again for 30 minutes, repeating the folding and rolling process once more.

The third time, the rolled sheet will be placed directly on the bottom of the tray, ready for baking. Baking will be done at a moderate temperature until the sheet turns golden and crispy. We follow the same process for the other two remaining sheets from compositions 1 and 2, resulting in the second cream puff sheet.

Now, let’s take care of the delicious cream. In a bowl, we mix 4 large tablespoons of wheat flour with 6 egg yolks and a cup of cold milk. This mixture will form the base of our cream. Separately, we beat the egg whites of the 6 eggs with a cup of sugar until we obtain a stiff and shiny foam. In a saucepan, we put 3 cups of milk together with 5 packets of vanilla sugar to boil. When the milk starts to boil, we add the yolk and flour mixture, letting it boil until it thickens.

Once the cream has reached the desired consistency, we take it off the heat and gradually add the beaten egg whites, gently mixing to avoid destroying their structure. The cream should be smooth and fluffy. We then pour it over the first warm dough sheet, carefully place the second sheet on top, and let the preparation cool to firm up and infuse the flavors. This cream puff recipe is a true delight, perfect for any special occasion or simply to indulge in something sweet!

 Ingredients: We need for the cream: 4 large tablespoons of flour, 4 cups of milk (1L), 5 packets of vanilla sugar, 1 cup of sugar, 6 eggs.
