Ingredients: For 3 servings: - 2 large grapefruits - 3 pieces of salmon fillet - 3 red chili peppers (ours were not very spicy, but if you use spicier peppers, 1 or 2 will suffice, to taste) - 2 tablespoons of sugar - parsley - rice
To prepare a grapefruit glazed salmon, we start by creating a delicious glaze that will add a fresh note and an inviting flavor to our dish. The first step is to squeeze the juice from a whole grapefruit and a half. It is important to choose ripe grapefruits that are juicy to achieve an intense flavor. After obtaining the juice, you will bring it to a boil in a small saucepan, along with a finely chopped red pepper. Also, add a few tablespoons of sugar to balance the acidity of the grapefruit, thus achieving a balanced glaze. Boil the mixture over medium heat for about 15 minutes, stirring occasionally, until you notice it has thickened and has a consistency similar to that of syrup. This glaze will add a special flavor, and the combination of grapefruit and chili pepper will create a pleasant contrast.
While the glaze cools, prepare the salmon. Choose fresh salmon fillets with the skin intact to achieve a crispy texture. Place the fillets on a baking sheet lined with parchment paper to prevent sticking. Use some of the glaze you prepared earlier to evenly coat the salmon fillets, ensuring they are well covered. This step is essential, as the glaze will add not only flavor but also a beautiful color to the surface of the fish when cooked. Add the grapefruit slices to the saucepan with the remaining glaze and boil the mixture for another 12 minutes. This step will allow the flavors to combine and intensify, resulting in a delicious sauce that will perfectly complement the glazed salmon. Finally, serve the salmon alongside the obtained sauce, garnishing with a few slices of grapefruit and possibly some fresh herbs, such as dill or coriander, for an attractive appearance. This dish is not only tasty but also full of vitamins and nutrients, making it an excellent choice for a healthy meal.
