Step-by-Step Instructions
1. Preparing the base
We start with a solid base, and for this, we separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form – this will give the cake an airy texture. In another bowl, mix the margarine with the powdered sugar until it becomes a fluffy cream. Gradually add the yolks, continuing to mix until well combined.
Then, fold in the ground walnuts and sifted flour along with the baking powder. Finally, carefully add the beaten egg whites, grated chocolate, and ground walnuts, gently mixing with a spatula to maintain the airiness of the batter.
Pour the mixture into a springform pan (26 cm in diameter) lined with parchment paper. Bake in a preheated oven at 180°C (medium heat) for about 40 minutes. Check the cake with a toothpick test: if it comes out clean, the base is ready. Let it cool completely before cutting it into three equal parts.
2. Preparing the syrup
To add moisture and flavor to the layers, we prepare a delicious syrup. Caramelize the sugar in a saucepan until golden, then carefully add the water (it will steam). Stir until all the caramel is dissolved. Finally, add the rum essence and let the syrup cool.
3. Preparing the cream
In a bowl, mix the margarine with the powdered sugar until creamy. Gently fold in the whipped cream, ground walnuts, and vanilla essence. Make sure to mix lightly to preserve the airy texture of the cream.
4. Preparing the glaze
For the glaze, place the broken chocolate, liquid cream, and margarine in a saucepan over low heat. Stir continuously until you achieve a smooth and glossy cream. This will add an elegant finish to the cake.
5. Assembling the cake
Line the pan in which you baked the base with plastic wrap. Place the first layer, generously soak it with the prepared syrup, then add half of the cream. Continue with the second layer, soak it, and add the remaining cream. Cover with the last layer, which you also soak. Cover the cake with plastic wrap and let it freeze for 30 minutes to set.
6. Glazing and decorating the cake
After the cake has cooled and set, remove it from the freezer and glaze it evenly with the chocolate cream. Let your imagination run wild with the decoration: add walnut halves on top and sprinkle with ground walnuts for a rustic look.
Practical Tips
- Choosing ingredients: Use high-quality chocolate to achieve a rich and flavorful glaze. Dark chocolate will provide a pleasant contrast to the sweetness of the cake.
- Roasted walnuts: Roast the walnuts in the oven for a few minutes before grinding them. This will enhance the flavor and add a crunchy texture.
- Storing the cake: The cake can be stored in the refrigerator for a few days, covered with plastic wrap. It can also be frozen, but it is recommended to consume it fresh to maintain the texture.
Possible Variations
- White chocolate: You can replace the milk chocolate with white chocolate for a sweeter version.
- Fruits: Add fresh fruits between the layers of cream for a touch of freshness (raspberries or strawberries are excellent choices).
Nutritional Benefits
Although this cake is a sweet delight, its ingredients also provide benefits. Walnuts are rich in omega-3 fatty acids and proteins, while chocolate contains antioxidants that can be beneficial for health. Enjoy in moderation and savor every slice!
Frequently Asked Questions
