Pepper Paste with Tomatoes
Ingredients: 20 red bell peppers, 2 kg of tomatoes, salt to taste, 1 aspirin per 1 kg of liquid
We carefully wash the peppers and tomatoes, making sure to remove any impurities. We prepare a large pot of water and put it on the heat, allowing the water to reach boiling point. Once the water is boiling, we add the whole tomatoes and let them blanch for a few minutes until the skin starts to peel off. This process makes it easier to clean the tomatoes, which become much easier to prepare. After removing them from the water, we let them cool a bit, then peel off the skins.
To obtain a fine and delicious sauce, we use a blender. We pass the peeled tomatoes through the blender, obtaining a smooth paste, which we strain through a fine sieve to separate the seeds and pulp, keeping only the juice. This method is simple and effective, and the result is a vibrant tomato juice full of flavor. Instead of using a tomato separator machine, which can complicate the process, the blender is a quick and convenient option.
After obtaining the tomato juice, we return to the washed and cored peppers. They are finely chopped using a meat grinder or a food processor, depending on our preferences. Once the peppers are chopped, we add them to a large pot along with the tomato juice. We let the mixture simmer on low heat, stirring occasionally to prevent sticking. It is important to monitor the consistency of the sauce so that we reach the desired texture.
After the sauce has simmered and thickened, we can use the blender again to turn it into a smooth paste, similar to a broth. However, if you prefer a more rustic texture, you can leave the sauce as it is. We add salt to taste, being careful not to overdo it, and then prepare a mixture of aspirin. In a small bowl, we add as many aspirin tablets as there are liters of juice. We pour a little of the liquid obtained to help dissolve the aspirin, then pour the mixture into the entire amount of paste.
To preserve the broth, we use clean and dry jars or bottles. We fill the containers with broth, being careful to leave a little space at the top, then seal them tightly with lids. We store the jars in the pantry, where they can be kept for use in various dishes throughout the winter. This recipe not only provides a delicious sauce but is also an excellent way to preserve tomatoes and peppers, bringing the flavors of summer to our plates all year round.
