Pan Bauletto (Bread in the Tray)
To prepare a delicious and fluffy bread, the beginning is essential. In a container, we dissolve fresh yeast in warm milk and water. It is important that the liquids are warm but not hot, to activate the yeast without destroying its properties. In a large bowl, we put the flour, and in the middle of it, we make a well, like a small crater, where we will add the milk and yeast mixture, along with the honey. It is recommended to mix the ingredients with a fork or with hands, to incorporate them gradually.
After we start to obtain a homogeneous paste, we add salt and oil, continuing to knead the dough. It is important to knead well for about 10-15 minutes until the dough becomes elastic and smooth. Once we achieve the desired consistency, we cover the bowl with a damp towel and let the dough rise in a warm place for about 2 hours, or until it doubles in volume.
After the dough has risen, we transfer it to a work surface sprinkled with a little flour. We roll it out with a rolling pin, forming a rectangle, similar to that of a loaf. Then, we start to roll the dough tightly, being careful to keep the shape uniform. We take a 30 cm loaf pan, which we line with baking paper, ensuring it is well covered to prevent sticking.
We place the rolled dough in the pan and let it rise for another hour, covered with a towel. At this stage, we preheat the oven to 170 degrees Celsius. After the dough has risen again, we brush it with milk to give it a golden and shiny crust. We bake the bread in the oven for 35 minutes, watching it brown nicely.
Once the bread is ready, we take it out of the oven and brush it again with milk, then cover it with a damp towel, letting it cool. This step will help maintain the moisture and fluffy texture. The resulting bread is perfect to be enjoyed with cold cuts, Nutella, or jams, but it can also be eaten plain, being extremely tasty. This recipe not only gives us delicious bread but also a special satisfaction of preparing it with our own hands.
