Spiral Skewers
Pork leg is one of the most versatile and flavorful cuts of meat, and when prepared this way, it becomes a true culinary feast. To start, we choose a fresh, quality pork leg, which we will cut into slices about 1-2 centimeters thick. It is important to ensure that each slice is uniform so that it cooks evenly. After cutting the meat, we place it between two sheets of plastic and, using a meat mallet, we gently pound it, being careful not to tear it. The goal is to achieve a tender texture, perfect for rolling.
While we are dealing with the meat, we slice the smoked bacon into thin slices, as its strong flavor will enrich the dish and add an irresistible taste. Once we have all the ingredients prepared, we sprinkle ground white, black, and green pepper on each slice of meat, ensuring it is evenly distributed. These spices will intensify the flavors and provide a pleasant contrast with the smoked bacon.
Now, on each seasoned slice of meat, we place the slices of bacon, starting from one end of the meat slices and continuing to roll tightly, so that the ingredients remain well wrapped. The obtained rolls are then cut into portions the thickness of a finger, to create skewers that are easy to eat. These can be skewered on wooden or metal sticks, preparing them for cooking.
To cook them, we prepare a tray in which we place aluminum foil, which will help retain moisture and ensure even cooking. The skewers are carefully placed in the tray and put into a preheated oven at 200 degrees Celsius. We let them brown for about 25-30 minutes, turning them occasionally to cook evenly.
However, if you want to explore an even more delicious option, I recommend grilling the skewers over hot coals. The fire will give a special flavor, loved by all foodies. The obtained skewers will be beautifully browned, with a crispy crust on the outside and juicy on the inside.
