Ingredients for the base:
- 4 large eggs
- 100 ml water
- 150 g sugar
- 100 g flour
- 50 g cocoa
- 1 packet of baking powder
- a pinch of salt
Ingredients for the filling:
- 300 g cherries (preferably from a jar, well drained)
- 200 g dark chocolate (minimum 70% cocoa)
- 200 ml whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Ingredients for decoration:
- Cocoa or grated chocolate
- A few fresh cherries or from a jar
Preparation:
1. Start by preheating the oven to 180°C. Prepare a 22 cm diameter cake pan by greasing it with butter and dusting it with flour or using parchment paper.
2. Separate the eggs: put the egg whites in a large bowl and the yolks in another. Beat the yolks with water and sugar until you get a creamy, light-colored mixture. Add a pinch of salt to stabilize the egg whites.
3. Beat the egg whites with a mixer until stiff peaks form. This step is essential for a fluffy base. Gently fold the beaten egg whites into the yolk mixture using a spatula, being careful not to lose the air in the mixture.
4. In another bowl, sift the flour, cocoa, and baking powder. Incorporate the flour mixture into the egg mixture, folding gently until the ingredients are well combined.
5. Pour the mixture into the prepared pan and bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely before removing it from the pan.
6. While the base cools, prepare the filling. Melt the dark chocolate in a double boiler or in the microwave. In a separate bowl, whip the cream with the powdered sugar and vanilla extract until firm.
7. Once the chocolate has cooled slightly, fold it into the whipped cream until well combined. Add the cherries and gently mix to avoid crushing the fruit.
8. Cut the cooled base in half horizontally. Place the first half on a serving platter and spread half of the chocolate cherry filling on top. Cover with the second half of the base and spread the remaining filling on top.
9. For an elegant decoration, sprinkle cocoa or grated chocolate on top of the cake and decorate with a few fresh or jarred cherries.
