Start with the first layer: mix the plain carrot puree with 1/4 teaspoon of sugar, a pinch of nutmeg, 40 g of mascarpone, salt, and white pepper to taste. Incorporate the chopped leek, peas, and diced red pepper, carefully mixing so as not to crush the vegetables. Pour this mixture over the first layer and level the surface again. Place the dish in the cold for another hour to one and a half hours.

For the third layer, mix the broccoli puree with 90 g of mascarpone, crushed garlic, and cumin. This combination will provide an intense and aromatic flavor to the dish. Add 10 g of the prepared gelatin and mix well. Once you finish this layer, let it cool for about one hour to one and a half hours.

Once all layers are well set, invert the dish onto a platter and carefully remove the plastic wrap. Your dish is now ready to be decorated. Sprinkle chopped parsley leaves on top for an attractive appearance. Slice the dish as desired before serving, providing your guests with an unforgettable visual and tasting experience.
