Baking time: 40 minutes
Total time: 2 hours and 10 minutes (including cooling time)
Number of servings: 8

Ingredients

For the crust:
- 100 g butter (at room temperature)
- 250 g flour
- 2 eggs (medium)
- 100 g powdered sugar
- A pinch of salt
- 1 tablespoon of cold water

For the vanilla cream:
- 3 eggs (separate egg whites and yolks)
- 80 g flour
- 150 g granulated sugar
- 500 ml milk (preferably cow's milk)
- 25 g butter
- 1 packet of vanilla sugar
- 30 ml rum (for added flavor)

For the filling:
- 1 kg watermelon (seedless)
- 1 kg cantaloupe (seedless)
- 1 packet of gelatin

Preparation

Step 1: Preparing the melons
Start by removing the seeds from the melons. Cut them into small cubes and place them in the freezer for about 2 hours. This step not only adds a refreshing note but also helps create a pleasant texture in your tart.

Step 2: Preparing the dough
In a large bowl, mix the butter with the flour until you obtain a homogeneous mixture. Add the powdered sugar, a pinch of salt, and the 2 eggs. Knead the ingredients well, adding a tablespoon of cold water until the dough becomes elastic. Shape it into a ball, cover it with plastic wrap, and refrigerate for 1 hour.

Step 3: Preparing the vanilla cream
Whip the egg whites until stiff, then add 100 g of granulated sugar and the rum. Continue beating until the mixture is firm. In an enamel pot, cream the egg yolks with the remaining sugar. Add 4 tablespoons of milk and mix well, then incorporate the flour. Keep mixing until there are no lumps.

Gradually add 250 ml of cold milk and mix until you obtain a batter similar to pancake batter. Place the pot on low heat and stir constantly until it homogenizes. At this point, add the butter and continue to stir quickly. When the mixture becomes thick, pour in the remaining hot milk and stir until you obtain a smooth cream. When ready, add the vanilla sugar and the whipped egg whites, gently mixing to maintain the cream's fluffiness. Let the cream cool for 2 hours in the refrigerator.

Step 4: Baking the crust
Preheat the oven to 180°C. Grease a tart pan with butter and spread the dough evenly across the bottom and sides. Bake the crust for 40 minutes or until golden brown. Allow it to cool completely after baking.

Step 5: Assembling the tart
Once the crust has cooled, gently poke it with a fork to make room for the vanilla cream. Pour the vanilla cream into the center of the tart and smooth it out. Then, take the melons out of the freezer and scoop balls using a special ice cream scoop. Place the melon balls on top of the cream.

Step 6: Glazing
Prepare the gelatin according to the instructions on the package and pour it over the melon balls to give them a glossy appearance and keep them fresh.

Step 7: Serving
The Color Tart is served cold, making it a perfect refreshing dessert on hot summer days. It can be accompanied by a scoop of vanilla ice cream or a glass of freshly squeezed lemonade.

Useful tips
- Make sure the butter is at room temperature for easier incorporation into the dough.
- You can also use other seasonal fruits, such as strawberries or peaches, to add a touch of variety.
- If you prefer a less sweet tart, reduce the amount of sugar in the cream.

Nutritional benefits
This tart is an excellent source of vitamins due to the fresh fruits. Watermelon is rich in water, vitamin C, and antioxidants, while cantaloupe contains beta-carotene, essential for skin health. Additionally, the vanilla cream adds protein from the eggs and calcium from the milk.
