Spicy Polenta with Mushrooms or Fancy Appetizer
To prepare a delicious recipe of polenta with mushrooms, start by combining chicken broth with milk in a generous container. Add a bay leaf, salt, and pepper, then place the mixture over medium heat. Make sure to stir occasionally to prevent the ingredients from sticking to the bottom of the pot. Meanwhile, clean the mushrooms and slice them finely. The onion should be washed and finely chopped, thus preparing the base for the rich flavors of the dish.
In a heated skillet, add the oil and as soon as it heats up, add the chopped onion. Sauté the onion for a few minutes until it becomes translucent and fragrant. Then add the sliced mushrooms, stirring with a spatula to distribute them evenly. Let the mushrooms fry, stirring occasionally, until they release their water and start to turn golden. Add the wine and let it simmer for a few minutes until all the liquid has evaporated. Season with salt, pepper, finely chopped garlic, and fresh dill. Once the flavors have combined, turn off the heat.
Meanwhile, the milk and broth mixture has started to boil. Remove the bay leaf and incorporate the cornmeal in a rain, constantly stirring with a whisk to prevent lumps from forming. Once the cornmeal is incorporated, grate the cheese and add it to the hot polenta mixture, stirring continuously until the cheese melts completely and becomes homogeneous.
Once the polenta is ready, pour the mixture into a 20 cm x 20 cm tray. Let it cool to room temperature. After it has set, remove the polenta from the tray and cut it into small cubes of 2 cm x 2 cm. Fry each cube in a pan with a mixture of butter and oil until they become golden and crispy on all sides. After frying, remove them onto an absorbent towel to remove excess oil.
To serve, arrange the polenta cubes on an elegant platter. On top of each serving, place two teaspoons of the fried mushroom mixture. Carefully sprinkle a little grated parmesan and finish with a few sprigs of freshly chopped parsley. This dish is perfect as an appetizer for festive meals, accompanied by a glass of quality wine that will complete the culinary experience. The crispy polenta and aromatic mushrooms will surely impress any guest, and the combination of textures and flavors will turn every meal into an unforgettable feast.
