Canneloni with Urda
Ingredients: a package of cannelloni 500 g of ricotta 250 g of provola or smoked cheese 250 g of cooked ham 1 liter of tomato juice
To prepare a delicious recipe for cannelloni stuffed with ricotta, provolone, and prosciutto, we start by making the tomato sauce. In a pot, we bring the tomato juice to a boil, adding a little olive oil and a pinch of salt to enhance the flavors. If you have some fresh basil leaves on hand, add them to the sauce for extra flavor. Let the sauce simmer on low heat, stirring occasionally, until it thickens and becomes aromatic.
Meanwhile, prepare the filling for the cannelloni. Cut the provolone or smoked cheese into small cubes, and the prosciutto into thin strips. In a large bowl, combine the ricotta with the provolone cubes and the prosciutto strips, mixing well until you get a homogeneous mixture. When the tomato sauce is ready and has a pleasant consistency, add a ladle of it to the ricotta, provolone, and prosciutto mixture to better bind the ingredients.
Now, it's time to assemble the cannelloni. Prepare a baking dish where you will place the cannelloni. Pour a thin layer of tomato sauce on the bottom of the dish, ensuring that it will prevent the cannelloni from sticking. Take each tube of cannelloni and fill it with the ricotta, provolone, and prosciutto mixture, being careful not to overfill to avoid spilling during cooking. Arrange the cannelloni in the dish, side by side, so they do not move during boiling.
Once all the cannelloni are placed in the dish, pour the remaining tomato sauce over them, spreading it evenly with a spatula. Finally, sprinkle grated Parmesan on top, adjusting the amount according to your preferences. Cover the dish with aluminum foil to retain moisture during baking.
Preheat the oven to 180 degrees Celsius and place the dish inside for about 10-15 minutes. This will allow the cannelloni to heat up and the flavors to meld. After this time, remove the aluminum foil and let the cannelloni brown for another 5-10 minutes, until the Parmesan turns golden and crispy.
After taking them out of the oven, let them rest for a few minutes before serving.
